I made coconut flour (gluten-free) pancakes. The baby pretended to eat them. The dog loved them, and got breakfast in bed. ❤️🙌☕️ 🥞 RECIPE; 1/2 cup coconut flour 1/8 t baking soda Pinch of salt 1/3 - 1/4 cup coconut or almond milk 2 T organic, cold-pressed coconut oil 3 eggs 1-2 T honey 1/2 t pure vanilla extract Maple syrup to taste Grass-fed butter for cooking . Mix all the wet ingredients (melt the coconut oil before mixing in). Beat and fold in the dry ingredients. Heat a griddle or pan. Great with butter and place about 1/8 of a cup batter on the hot surface to cook. Make small pancakes, they are easier to manage when going gluten free. Use whatever fruit you like on them. We had pomegranate, blueberries, coconut flakes and maple syrup!
