Ingredients:
2 1/2 cups oats
1 cup iogo 1% vanilla or strawberry yogurt
2 eggs
1/4 cup stevia
1 1/2 tsp baking powder
1/2 tsp baking soda
1 1/2 cups chopped strawberries β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”
Directions:
1. Preheat oven to 400 degrees. Spray a muffin tin with non stick spray.
2. In a large bowl, mix all the ingredients together except the strawberries. Chop your strawberries and add to the mixture.
3. Pour into prepared muffin tin. Bake for 20-25 minutes. Enjoy!
Makes 12 muffins.

1/4 cup meltedΒ ghee, butter or coconut oil
6 eggs
1/2 cup full fat coconut milk
1/4 cup honey
2 tsp vanilla
2 tb lemon juice
2/3 cup coconut flour
1 scoop @vitalproteins collagen peptides
1 tsp baking powder
2 tsp cinnamon
1/2 tsp salt
1 tsp lemon zest
1 cup fresh blueberries
1/3 cup dairy free chocolate chips (optional)
preheat oven to 375. line a muffin pan with 12 liners. in a medium bowl, whisk together the eggs, ghee/butter, coconut milk, honey, lemon zest, and lemon juice. in another bowl, mix together the coconut flour, collagen, baking powder, cinnamon, and salt. pour the dry ingredients into the wet, and stir together, folding in the blueberries last. sprinkle chocolate chips on top. bake for 28-30 minutes. enjoy and HAPPY WEDNESDAY! #kalejunkie #stayvital #partner

These apple banana oat muffins are my morning staple right now. Decided to add in oats to the recipe this week and it’s so good! I have a super sensitive stomach in the morning, so it’s nice to have something homemade since I know there’s no added sugar and not any weird fake stuff that might hurt my tummy during workout.
I’ve been warming one up, putting a tsp of peanut butter on top, and having it with my pre-workout energy juice that I can’t live without (nothing artificial in that either)! 😁

We seem to have pumpkin on very high rotation in our house at the moment, so tasty & so cheap currently & these muffins are another of my pumpkin creations. I split the mix & made some mini muffins for my nearly 7 month old (but how πŸ™ˆ) & then some regular size for the rest of the fam & they are a hit! .

INGREDIENTS: .
- 2 cups wholemeal SR flour.
- 1/2 cup grated cheese.
. - 1 spring onion, finely diced.
- 1 zucchini, grated.
- 1/2 cup oil.
- 1 egg.
- 2 cups mashed pumpkin, cooled.

METHOD:
1. Pre-heat oven to 180 degrees C & grease/line muffin tray.

2. In a large bowl combine flour, cheese, onion & zucchini, make a well in the centre then add oil, egg and pumpkin. Mix until combined (try not to over mix to avoid them getting tough) then spoon into muffin tray. Bake for 10- 15 minutes for mini muffins & 20- 25 minutes for regular muffins or until skewer inserted into the center comes out clean.

Very easy to make with not too many ingredients:
- 3 bananas (2 for baking/1 for decorating)
- 2 cups almond meal
- 1 tsp cinnamon
- 2 tsp baking powder
- 1 cup dates, chopped
- 3 eggs
- 1/4 cup coconut oil
- 1 tbsp peanut butter (plus extra for decorating)

- preheat oven to 180c
- place ingredients in food processor or blender and mix till smooth
- divide into muffin tins and top with a slice of banana and tsp of PB
- bake for 35-40mins (may vary depending on oven. Mine took about 25mins)

#throwback to when I baked Apple Cinnamon Muffins 🍎 🍏 I wish I could remember what the recipe was! Now I need to try making them again to figure out the recipe 😏 #notcomplaining

Almond flour lemon yoghurt cupcakes! These are soooo delicious and are gluten free too!
Ingredients:
- 2 1/2 cups lightly packed almond flour - 2 tsp baking powder - 1/2 tsp salt
- 1 cup Greek yogurt - 1/2 cup sugar
- 2 eggs
- 1 tsp vanilla essence - zest of 1 med lemon
- 1/4 cup olive oil
- 1 cup fresh blueberries - Icing sugar to dust

Method:

1. Preheat oven to 180 degrees.
2. In a large bowl, whisk together almond flour, baking soda and salt.
3. In a separate bowl, whisk together yoghurt, sugar, eggs, vanilla and lemon zest.
4. Add wet ingredients to the dry, and stir to combine. Slowly fold in olive oil.
5. Line cupcake tray with cupcake cases, spray lightly with cooking oil.
6. Transfer roughly one spoon of batter into each case, filling only halfway with mix. Sprinkle 5-6 blueberries over mix, and fill the rest of the case. Sprinkle 5-6 more berries over the top.
7. Bake for 35 minutes or till cakes are lightly browned and skewer comes out clean.
8. Cool on tray, dust lightly with icing sugar and serve with ice cream or Greek yogurt for a healthier option.

These Apple Ginger muffins taste SO good!! I had 2 for my afternoon snack and it took all my willpower to not eat the rest!! These are a great snack option for when you’re on the go or to take to work πŸ˜„

It’s the first time I’ve tried this recipe and I’ve slightly adapted it from amyshealthybaking.com:
- 1 + 1/3 cup of oat bran
- 1/3 cup greek yogurt
- 1/2 cup almond milk
- tsp vanilla essence
- 1 cup of rolled oats
- 2 tsp of baking powder
- 2 tsp of cinnamon
- 1 tbsp of ground ginger
- 1 egg
- 1 tbsp coconut oil
- 1/4 cup golden syrup
- 1/4 cup maple flavoured syrup (or maple syrup)
- 1 large apple (diced)
METHOD:
> preheat oven to 180c fanforced
> combined oat bran, yogurt, almond milk and vanilla essence. Leave for 10mins.
> in a separate bowl, combine oats, cinnamon, ginger and baking powder.
> in another bowl, whisk together egg, coconut oil, golden syrup and maple flavoured syrup
> combine oat bran mix and egg mix. Make sure they are combined well.
> add oats mix until just combined.
> fold in diced apple.
> divide into muffin cases and bake for 15-20mins.

I wouldn’t normally use a maple flavoured syrup over actual maple syrup, but it’s all I had in the cupboard and I figured it was only a small amount. But I have to say, it really gives it a nice maple flavour!

I am a huge fan of muffins that are nutritious and a little more dense. These definitely are healthier but soooo delicious! No refined sugar or oils 😊
I used buckwheat flour because I had it already and I like the heartiness it adds, but you could definitely use regular flour or whole wheat if you do not like the taste of buckwheat! β €
