We made enchiladas for a good cheat!! So yum! No cheese on the inside, but a little handful of grass-fed on the outside. and no tortillas! Instead, we used super thin sliced zucchini to wrap them in.
I promise you won’t miss the tortilla, or the inflammation 😉 yes, yes I know but there’s cheese on there!! 🤷🏼♀️lol
4 large zucchini
3 cups shredded chicken
1/2 cup cheese
Handful of cilantro, chopped
1 teaspoon sun-coco oil
Red enchilada sauce
Seasonings-used cumin, chili powder, onion flakes.
Preheat oven to 350
With a curved peeler, mandolin slice the zucchini into super thin slices.
Oil sautee pan and add garlic and onion flakes, until browned.
Add shredded chicken and 1 cup of the sauce, until heated and “saucy”
Lay out three slices of zucchini a little over lapped and roll up some chicken mixture inside.
Repeat, top with the rest of the sauce and cheese.
Bake for about 18 minutes, sprinkle cilantro and #voila
