Double shot of caffeine this morning. ☕️☕️ Coffee Pancakes; made with coconut flour and steel cut oats. If you’re a lover of coffee you’re definitely going to want to give this one a try. _________________________________________________ Ingredients: * 1/2 cup Oat Flour * 1/2 cup Coconut Flour * 1 teaspoon Baking Powder * 1 teaspoon Baking Soda * 1 teaspoon Vanilla Extract * 1/2 teaspoons Salt * 1/2 teaspoon Nutmeg * 1/2 teaspoon Spice * 1/4 cup Honey (or alternate sweetener) * 1 whole Egg * 1 cup unsweetened Almond Milk (added 2 tsp lemon juice to create buttermilk) * 2 Tablespoons Instant Coffee Granules * Coconut Oil; for cooking. Recipe: Preheat oven to 200 - 250 degrees F (to keep the pancakes warm until ready to serve). Combine dry ingredients (except the coffee granules) in a large bowl.
In another bowl, whisk together wet ingredients and coffee granules until completely dissolved. Add wet mixture to dry ingredients and combine. Add Coconut Oil to skillet and bring to medium heat. Spoon 1/3 cups of the mixture onto the skillet and cook until bubbles form along the sides and in the center. Flip. Cook on opposite side until golden brown. Serve with warm sugar free pancake/maple syrup and your favourite toppings.
