FOOD STORIES - DESSERT WEEK flashback - last year I studied at the amazing PLANTLAB Culinary School of Matthew Kenny in both Maine and NYC. I had great teachers and have been lucky to always have great teachers in my life. My Mum is one of them, she is an incredible cook and still influences my cooking today. So in dessert week in Maine (Level 3) I was inspired by the local seasonal produce and played with Peaches, Raspberries. This was inspired by the "Peach Melba" filled with Peach flowers, raspberry gel, Tonka bean ice cream, meringue (no eggs), vanilla cream pearls, meringue dust and almonds.
