Belfast Morning Dew 🌿💧
This dish is inspired by NOMA and the beautiful beach and lake shores I've been seeing all over Belfast, Maine.
I see the little aerated white chocolate, ice cream and shortbread as the rocks that stretches all along the beach, and that golden yuzu powder is the sand ✨ the honeydew sorrel granita is the fresh morning dew 🌱 and the fresh micro greens and flowers are the beautiful plants that surrounds the shores 🌸
There is so much that goes into this dish, from making the almond ricotta from scratch, aerating the ice cream, tempering the white chocolate to that golden powder of sand, plus plating + photographing it is a bit of a challenge because half the components of this dish is frozen ❄️ I had sooo much going on in my head of what I wanted to make and grouping them together in a day was not easy - the description of this dish alone is a whole new paragraph😂 but it's basically..
Aerated white chocolate ricotta ice cream. Apple white balsamic. Honeydew yuzu granita and a sorrel granita. Sorrel lime curd. Sorrel jelly. Macadamia shortbread. Aerated white chocolate passionfruit rocks. Yuzu honeydew sand. Local little Maine blueberries and buckwheat sprouts that I bought at the farmer's market just an hour before plating!!
