I like how Miró decided to express Sun and Wind. His wind is like a black scattered dust with a small cold blue patch. His sun has different shades of warmth. It is not round because of the effects of the wind on it. And there’s this ray of light, detached from the sun forming a clear independent path. .
Imagine Sun and Wind in raw food. What color would the Sun be? What shape? What taste? What smell? What would it feel like? What plants, vegetables or fruits would be used to represent it? How would I, in raw food, without a stove, recreate its warmth? If it’s easy to picture the sun as a yellow, orange or red rounded shape that brings warmth on the palate, how would I represent wind? What does the wind look like? What does it taste like? I know for sure that my wind should come like a refreshing breeze to cool my sunburns. Sun and Wind should feel like a poem to the person tasting it. .

My Cheese Plate Submission.
Cultured nut cheese, one flavoured as a smokey Cheddar, the other a spicy jalapeño with lemon. The Cheddar I allowed to harden and form a rind, the jalapeño cheese I kept soft and mouldable, to create two different textures on the plate. The crackers are a cracked black pepper & Chia cracker. (In the last photo there is also the raw garlic & herb crackers I made, as well as the simple raw bread). The rest of the plate is a mix of sweet, salty, savoury, crunchy.

In other news, I impatiently await the results of my final assignment menu / plate submissions. 🤞🏻

Too matcha chocolate superfood fudge
.

The base is as per @plantlabculinary superfood fudge.
I simply added another layer of power 💪🏻💪🏻🙌🏻🙌🏻💫✨💥 1 cup coconut pulp (from coconut milk)
1 tablespoon of matcha powder (in the photo I used 2, I think one is enough)
1/2 teaspoon vanilla extract
3 tablespoons coconut sugar
1 tablespoon maca powder
1 tablespoon mesquite powder
3 tablespoons lucuma
¼ teaspoon chlorella or spirulina (optional)
3 tablespoons liquid sweetener of choice
3 tablespoons coconut oil, melted
Generous pinch of salt

Combine all ingredients together.
Press the chocolate fudge into a ring mold and place into the freezer for 30 min. Press the matcha superfood fudge on top and place in the freezer for another 30 min.
Remove from mold, cut while still cold and enjoy the double power 😋😜

My latest creation Raw Vegan Kimchi Dumplings...
Filled with cashew kimchi cream, topped with red cabbage and kimchi puree and ginger foam.
The dumplings are delicious, made of coconut meat, coriander and spinach juice then dehydrated to create the dumpling sheet. It was a surprise to see how full of flavour and light they are. Such a great replacement for heavy grains or processed wraps.
They are the perfect size appetizers and would look stunning served up at any dinner party.

This was a favourite to plate because of the brilliant vibrancy!

Now that my crazy fall portrait season is wrapping up, I was able to get back to my RAW food course today, and it felt all kinds of awesome to be creating in the kitchen again.
Today the assignment was to assess the ingredients that are available in the fridge, and create a dish from them. 10 minutes to write a recipe outline and then 40 minutes to execute all the components and then plate it.

This was what I came up with.

Melon Gazpacho, with pomegranate Oil. Cashew Mint Ricotta. Crushed pistachios. Pomegranate seeds and fresh mint.
The melon gazpacho : cantaloupe, white wine vinegar, red chili pepper, shallot, soaked cashews.
Cashew Ricotta : Cashews soaked in hot water (25 min), water, lemon juice, lots of fresh mint, salt.
Pomegranate Oil : Juice from one whole pomegranate, olive oil, white balsamic vinegar, salt.

It turned out way more flavorful than I was expecting. So fresh. A bit spicy. A little crunchy and sweet. I think it all balanced out quite beautifully.
