2 ingredient soup (okay, it’s technically a few more, but stay with me): roasted red kurri squash (slather raw halved squash with coconut oil, salt, & pepper and roast at 400 degrees F for 35-45 minutes), and vegetable broth. Simply scoop out the cooked squash and toss into a blender with warm vegetable (or chicken) broth. Add just enough broth to get it blended and very thick, then add broth slowly until it’s your desired consistency. Season with additional pepper & salt if needed. Note: this method will work with just about any winter squash, but I love the robust flavor of the red kurri. Enjoy!

It's really easy for me to overthink meals and make them too elaborate because I love to cook but it's really nice to take advice from Connor and keep it simple, too. Simple meals like these are what he enjoys the most - when he can deconstruct what I'm having here, he chooses to eat everything separately. Started with the plebeian/folk diet where you only eat simple things, two ingredients per plate and nothing more - eventually going to only one thing. It is called that way because the country people in the past used to eat what they could harvest from their own vicinity and usually that meant very limited array of foods - healthy and tasty nevertheless. Why not mash up those simple foods together? When you eat just a tomato for example, you rape your tongue and taste senses and make them completely focus and chisel all nerve endings into fully tasting and acknowledging the many different flavors one tomato can give. At first, its just a damn tomato. If you give it a try, it can give you a plethora of tastes. But use olive oil, salt and a green spice such as basil or parsley.
