I was looking at those tomatoes, they were looking at me. Filled with sunshine, bursting of good energy. I couldn't resist anymore and made myself this simple, PULPY TOMATO SOUP. Just fresh tomatoes, water + herbs & spices.. Served with olive oil toasted bread and a good sprinkle of amazing, vegan parmesan cheese on top. Ready in 10 minutes. Mmm.. :) /

How magically does the mood shift come a Friday afternoon. We throw off our misgivings and expand into that comfortable space sandwiched between weekdays. I’m curious as to who’s a carefree weekender and who’s a calculated one? . . I tend mostly toward calculations as I find I’m all together more content when I have a plan for the weekend. Unfortunately in some ways I think I have a perverse fear of unmade time; like ambiguities will make for lost opportunities. I’m trying to work on that and so with only one arrangement for tomorrow night the rest of my weekend is look rather vague. I think some sunshine might be in order; perhaps a moment in the kitchen; definitely a sleep in; oh and rather a great deal of packing. . . I must admit I do have one long-standing plan in place though; our Sunday night meal. We’re stuck on repeat with that one. It has Japanese roots and a bed of these lovely things; soba and edamame. I’ll have the recipe for you next week I promise though for now I hope you enjoy the anticipation of your plans; or lack there of.
