Another deliciously healthy supper from my great @mindfulchefuk cookbook. Tonight we had a yummy chicken curry with sweet potatoes and spinach in a lovely coconuty sauce. The recipe said to serve with wild rice but I used wholegrain basmati mixed with wild rice. Wonder what I'll cook tomorrow? #mindfulcooking #healthyeating #curry #30minmeal

Whole wheat walnut waffles • 1 3/4 cup whole wheat flour • 1 tsp baking soda • 2 tsp baking powder • 1/4 tsp salt • 2 Tbsp sugar • 1 cup chopped walnuts • 1 tsp cinnamon • 1/2 tsp nutmeg • 2 eggs • 1 cup buttermilk • 1/2 cup melted coconut oil •
Mix dry ingredients with wet mixture and cook on waffle iron!

ROASTED HEIRLOOMS
Taking in that last bit of summery goodness roasting these juicy tomatoes with some fresh thyme, garlic, balsamic vinegar and smoked paprika. 🍅🍅🍅 .

Low carb chicken fajitas, with chopped jalapeno and some left over corn, wrapped in almond flour tortillas topped with almond mozzarella. I used the chicken breast from the whole chicken that I got at Whole Foods Sunday. Nothing went to waste 🤗

I usually dislike putting corn into anything, due to it having no nutritional value really, but this was a good craving fixer.
First shredded the chicken breast and any other pieces I could salvage from the left over chicken, sauteed the corn in some olive oil, added some chilli, cumin and pepper, a pinch of Himalayan salt. Mix in chopped jalapenos, cook the combined for 5 min. Add the red sauce (I usually pick the low sodium mild sauce) 1/4 cup, simmer for another 5 min, until the liquid decreased.
Start placing the stuffing onto the tortillas, add a little bit of almond cheese, place in the baking dish. Top off with two tablespoons of the red sauce and almond cheese, bake covered for 10 min and uncover the pan bake for another 2-3 min.
Enjoy! I topped mine of with half an avocado and one tiny tomato. (You have the option to do this dish without tortillas and corn, you can add quinoa instead or black beans. And dairy options just replace the almond cheese with real cheese and sour cream 👌) Pathetic begging done by Kira 🐶 can't eat without her asking... #nutrition #nutritionbenefits

The positive birth book I started reading on Sunday, after a friend lent It to me, and it's brilliant. Highly recommend for any Mum-to-be, whatever your birth plans are. It's a much needed boost of positivity! Colouring for mums-to-be was a gift from a friend and it's a lovely way to relax, If you like #mindfulnesscolouring it's for you. I'll be packing it in my hospital bag. @jamieoliver new 5 ingredients book is ideal for easy meal inspiration, without too much shopping. I'm looking for recipes my husband can even have a go at making us. @mother_of_daughters book is packed full of useful information about pregnancy and birth, so it's a handy book to keep flicking back over on. Lastly my kindle - my most prized possession as I read constantly. Sunday homemade pasta night, I'm quite proud of how well my French rolling pin created a thin pasta sheet. Basil pasta transformed into tortellini filled with my prosciutto, mushroom, garlic and Parmesan, topped with a chiffonade of basil, more grated Parmesan, and smoked olivewood olive oil. More meal prep for the freezer. Today I've tackled chicken. #Fajitas are one of my favourite dinners. I've doubled the recipe (on my blog) and will Freeze the chicken and peppers in the marinade. I've also made loads of fresh #guacamole which I'll freeze too. I've never done this with guac before but I can't see why it won't be fine. I've got wraps in the freezer too so I'll just get my husband to grab salad and sourcream on the day I defrost them! I've also marinated some Piri piri chicken for the freezer, we have these in flatbreads, in salads and with roasted veg so it's always handy to have them. So... since I began this #wellness and #food journey, I knew that for me- being in the kitchen and cooking was a form of meditation. It calms me. It keeps me present. It's almost a spiritual experience. 🙌🏻
Then came the food styling - the concentration on colors, plating, textures and angles. Food become not only about taste and smell- but the visual aspect as well. It's double the work, double the prep, but double the fun.

And if anyone says that #meditating is only done by sitting like a Buddha and concentrating on one's breath, is mistaken.

Don't get me wrong, there's nothing wrong with the classic form of meditation. In fact, I've tried very hard for many years to accomplish a meditative state in stillness but it just isn't for me.

Today's late breakfast consisted of, if you're wondering:
A parfait layered with (from bottom up) chopped peaches and blackberries.
A chocolate smoothie made with:
1 frozen banana
1/2 cup almond milk
1 handful spinach
1/4 cup homemade #rawtella (raw cacao, maple syrup, hazelnuts, vanilla bean, walnuts, coconut oil, Himalayan salt and a bit of water blended in a #vitamix )
1 tbsp hemp seeds
3 tbsp raw cacao
And the final layer is a simple strawberry and white chia jam. My daughter added a few dried rose petals and there ya go.

Monday already - it's a fresh, new week. I hope everyone is feeling happy and motivated. I woke up to some lovely news that another one of the Mummas from my NCT class has had her baby, a lovely little girl, 8 days early! It's so nice hearing everyone's news, i'm so glad we did the antenatal classes! Last week was like a rollercoaster for me, emotionally. I just couldn't seem to create any equilibrium. One minute I was happy, upbeat and feeling positive and excited. The next feeling overwhelmed, terrified and anxious about everything. I'm so sensitive too, I am taking everything the wrong way! It's really tough actually, I'm finding this quite hard to deal with. Although physically I feel really good, the emotions are calling the shots. I'm trying my best to not get too upset and keep reminding myself they are just feelings and they will pass. I hope this week is more stable! Fingers crossed. How is everyone this week?
