Delicious dinner...or lunch...or breakfast! You can't see the tender blackened Mahi fillet underneath all of that beautiful, fresh mango salsa but it's there! I eat most of my meals as a salad because I try and bulk up every dish with as many leafy greens as possible. My entreé generally becomes the dressing and flavors the greens. It keeps me from adding extra sodium to season the greens separately, too. I like it all mixed up, but obviously you wouldn't have to do it that way. They say "eat the rainbow" and I do try and make my meals as colorful as possible to get all of those varied micronutrients (vitamins + minerals) within my macronutrients (proteins + carbs + fats). .
I eat a paleo based diet, so no dairy and no processed foods. I am not strictly paleo, though, because if I feel like grains, I will have some quinoa or brown rice. I'd just rather get my carbs from veggies when I can because I can really get full from them. I do eat some fruit, but mostly low-glycemic fruits. This meal has quinoa and fruit, so it is a bit carb heavy, but the fats +protein in the fish and the fiber in the quinoa and veggies do a nice job of balancing it all out. Who says eating healthy has to be boring?! This is my favorite dinner right now. .
