Cheesy Chicken Enchiladas
1 cup Cheddar Cheese
1 cup motzerella cheese
Coconut oil spray
Chili Powder 1/2 to 1 tablespoon
All purpose flour 2 tablespoons
Onion powder 1/2 tablespoon
2-3 cups of water
Vegetable oil or olive oil 2 tablespoons
Salt to taste
Place oil in a pan and heat up on high heat. Add flour and whisk until it clumps. Lower heat to medium high.Add water and continue to whisk until it starts to thicken like gravy. Add the chili powder, salt, and onion powder. If it gets too thick you can add more water to think it or thicken it to your liking. Once finished keep in simmer until your enchiladas are put together.
Shred up rotisserie chicken. You can add any type of seasoning you like at this point and mix into the chicken.
Now in a frying pan you want to fry up the corn tortillas a little. Turn stove on medium high heat and spray each side of the tortilla and lay in the pan. Let it cook up on both sides for about 30 seconds each side. Do that to each tortilla. Now assemble the enchiladas and add the chicken to each and roll up and lay in a baking dish. Once all are made and placed into the baking dish, add the Mole sauce and add the cheddar cheese and motzerella cheese to the top. Place them into the oven at 350 degrees for 30-35 minutes to heat up and let cheese melt. Enjoy 👌🏽😋
