The @brighton_soul spread ft the superfood granola, matcha pancakes, deconstructed sushi and smoothies. This is one of the most creative cafes I’ve been to, their entire menu is outstanding that it was so tough deciding what to order, and everything was delicious and beautifully presented 🍙🥞🍓

PANDAN CHIFFON WITH DURIAN FUDGE RECIPE I love eating pandan chiffons and have made that cake so many times I can start it and get it into the oven within 30 minutes. It always comes out nice and fluffy and normally I pair it with a pandan fudge as I love the flavour profile. But as I have two jars for durian jam, I decided I would try a durian fudge frosting as I love durian so much. I was unsure if it would work but I'm so happy to say that it worked brilliantly. The durian fudge does not taste synthetic at all given the jam uses real durian. The flavour is also intense enough and pairs so well with the pandan chiffon.
