Spicy peanut tofu over brown rice
🥜preheat oven to 400 and line a baking sheet with parchment paper.
🥜whisk together 1/3 cup #liquidaminos or #soysauce, 1/4 cup #ricevinegar, 1/4 #peanutbutter (creamy or crunchy works,) 2 tbsp #brownsugar, and 2 tbsp #sriracha (more or less to taste) and transfer to a shallow container. (I suggest you double this if you like extra sauce to pour over the rice.)
🥜drain and blot dry one block of #extrafirmtofu and slice into 8 pieces.
🥜dip the slices in mixture (marinate for an hour if you have time)
🥜lay out tofu onto sheet and bake for 35 mins, flipping halfway.
🥜cook rice while you're waiting. I used #brownrice, but white rice cooks faster and would be great.
🥜serve 2 cooked tofu slices over rice and top with extra sauce and #greenonion. (Optional: add broccoli, bok choy or any cooked veggie!)
Jordan loved this recipe and I LOVE peanut sauce on anything and everything so this one is marked to be repeated. That being said I wouldn't suggest tofu all the time. Soy is a GMO so it's not the healthiest thing but every once in awhile is okay. This dish is very filling and super delicious. If you've never tried tofu, I highly recommend trying this recipe!
