Since it's Thursday, I suppose it's appropriate to post a #tbt 😂 Kids are still doing that these days, right? Anyways, here's a throwback to when Georgia and I were road tripping around New York and found a little scenic spot to have lunch. We take road trip food very serious. 🚗🥗 We packed a bunch of berries, greens for the base of our salad, a bruschetta-inspired rice salad to go on top, and this delicious seedy bread that we made. Yesterday, I decided to keep it simple. Salad paired with a sweet potato and kombucha (not pictured)

It’s not #meatlessmonday but I felt like having LOTS of veggies tonight. I finally found a veggie burger that has ingredients in it that I can eat! Yay! (Swipe left to see what kind!) It’s sitting between 2 slices of @canyonglutenfree bread, with some hummus spread and pickles. A little side salad and some baby carrots. 🌮Pictured is two tacos made with chickpeas instead meat because I was bored and wanted to try something new. I’m glad I did! This would be a tasty taco idea for those trying to eat less meat, vegetarians, gluten-free fam (shells are corn tortillas), or vegans (substitute dairy free cheese or use avocado).
🌮I used canned chickpeas and heated them in a skillet with a little olive oil and taco seasoning for about 5 mins. Then I made them into tacos😋
🌮Super simple, inexpensive (1 can of beans is $0.59) and versatile. Toppings include spinach, tomato, onion, jalapeño, cheese and avocado.
🥑 Yes, there’s some spots on the avocado but I ate it before it looked completely like green 💩...avocado lovers you know what I’m talking about 😩😂.

Escondidinho de vegetais que fiz pro almoço de hoje. Super prático e gostoso!

Cozinhei a macaxeira enquanto refogava no azeite o alho poró, palmito, alho, cenoura e outros vegetais. Acrescentei um pouco de molho de tomate e temperos desidratados e deixei cozinhar por uns 2min.
Amassei com um garfo a macaxeira e adicionei manteiga e um pouco da água do cozimento até formar um creme.
Depois só montei as camadas em um recipiente de vidro nessa ordem: vegetais+creme de macaxeira+2colheres de chá de requeijão+queijo muçarela, e levei ao forno pra gratinar. 🧀🥦🌽🥕🍅

I’m not a vegan cause it’s trendy, I’m a vegan cause I care about the well being of animals. I understand that not every one in this world can feel the way I do, but if you care about the planet at least, then I ask that you just watch the things you are putting into your body. Just like your dog or cat, these animals feel immense pain and fear and their short lives on this earth are filled with horror and brutality. If you’re an animal lover, please educate yourselves on factory farming and in the inhumane treatment of animals in this country cause it’s fcking deplorable. I’m not gonna lie, today the hunger started to hit me, but only about half an hour before I was going to sit down and eat! And damn, those pumpkin seeds were missed - they add SO MUCH to a salad! Try them!! 😍

Take some pumpkin seeds - usually in the bulk seed/nut aisle at your grocery story - spread them out evenly on a baking sheet. Set your oven at 380° and roast for 4 minutes. Take a wooden spoon and move the seeds around, hopefully turning some over. Let those bad boys go for another 3-4 minutes and they’re done! 🎃

Healthy Falafels are my speciality. These ones are made with cauliflower, say woottt! And served with our Tereza's Choice beetroot hummus.

Recipe:

200g cauliflower florets
1 can white butter beans, rinsed and drained
1/2 cup (35g) parsley
120g spelt flour
2 garlic cloves
1 teaspoon ground cumin
2 teaspoons salt

Serve:
Tereza's Choice Hummus
Salad
Pita bread
Place cauliflower, parsley and garlic into the food processor and mix until fine. Add butter beans, spelt flour, cumin, salt in the jug of a food processor and process until coarsely chopped and mixed.
Shape the mix into medium sized balls.
Heat coconut oil in a small saucepan on high (oil height in pan at least 5-6 cm).
Carefully drop 3-4 falafel balls in the oil and fry for a minute or two until cooked and golden. Remove with a slotted spoon and drain on paper towels. Repeat for remaining balls.
Serve falafels on a bed of greens with beetroot hummus and salad. #terezaschoice
