Simple Chicken Curry (Assamese style)

INGREDIENTS:
1. Chicken
2. Peppercorns
3. Cumin seeds
4. Coriander seeds
5. Ginger
6. Garlic
7. Onion
8. Fresh coriander leaves
9. Salt
10. Turmeric powder
11. Garam masala
12. Cold water
13. Oil

PROCEDURE:
1. In a pan/kadhai roast cumin seeds, coriander seeds, peppercorns, ginger and garlic. Grind into a smooth paste.
2. In the same pan heat 2-4 tbsp oil, saute 1 chopped onion till golden brown and then fry the chicken pieces by adding salt and turmeric powder.
3. Add in the masala paste and mix all ingredients well. Cover with lid for five minutes.
4. Pour 3-4 four glasses of cold water to it and let it boil. Add little garam masala. The water should reduce till half of the initial quantity during the boiling process.
5. The texture will be gravy-like after the excess water evaporates. Garnish with chopped fresh coriander leaves.

This curry goes well with both chapati or steamed rice 😍
