Tonight’s dinner was something different and super yummy! Shrimp Pesto Linguine Zoodle Bowl 🤤 Not only is this a one pot stop, but we’re also putting a healthy twist on it.

Let’s get to the details 😋
-Ingredients-
🥖6oz 100% whole wheat linguine or fettuccine
🥖1 medium to large zucchini
🥖3 cups broccoli florets (about 7oz)
🥖1/4 cup basil pesto (you can use homemade if you’d like, less sodium that way)
🥖2 tbsp Dijon mustard
🥖1/2 lemon juice (about 1 tbsp)
🥖1 pound medium shrimp
-Instructions-
🥖 Bring water to boil in a Dutch oven over medium head. Add pasta and cook for 6 minutes. Add broccoli to pasta and cook for an additional 6-8 minutes. Cool pasta until al dente and broccoli is tender.
🥖Reserve 1/2 cup cooking water and set aside. Drain the pasta and broccoli.
🥖Return the pasta and broccoli to Dutch oven; reduce heat to low. Stir in pesto, mustard, and lemon juice. Add shrimp. Stirring often until shrimp are cooked to your liking. If your noodles are dry, and 1 tablespoon at a time for creaminess.
🥖If making zoodles begin cooking the zoodles right when you put the shrimp in the noodle combo. Begin by heating up 1 tbsp avocado oil in pan. Add zoodles to pan and cook for 8-12 minutes until warm.
🥖Once done place some zoodles on the bottom of your bowl, next add broccoli and shrimp combo together. Mix together and enjoy!
**Optional: add some shredded Parmesan cheese.
**Looking to make this a lower carb meal skip the noodles and just use zoodles!

Made a quick veggie bowl for lunch today for #mealmonday ! I have a lot to do today and wanted something crispy so I threw these veggies into the oven and did some stuff and then bang 💥 they were done! Still eating a little bit of meat and mixing it up with more veggie dense meals! Again I’m no chef 🙅🏼‍♀️ I just like to change up what I eat and try new things!

The best things to eat are simple! Clean! Flavor!
Greens for your salad base. I use spinach, Kale, arugula, lettuce.
Tomatoes.
Onion, I enjoy purple.
Quinoa.
Chicken.
Mix 1 tsp of MCT with 1/2- 1 tbsp of lime, 1-3 drops of lime yleo and drizzle on salad prior to eating.
Absolutely delicious, light and satisfying 🤤

If it's not red meat, does it still qualify as meatless Monday? Either way this salad is great.

#mealmonday is not meatless this week! I do still eat meat just not as much! Maybe 2-3 times per week. Purple potato’s are probably my favorite thing right now 😋 they taste better to me but who knows if they actually taste different 😂 ANYWAYS I made turkey meatballs to go with these potato’s and they are amazing! A lot better than I thought they’d be! I got this recipe off Pinterest!

🍝🍝Here is tonight’s meatball recipe:
•Ingredients•
🍝 1/4-1/2 cup onion
🍝 1 large garlic clove
🍝 1 egg
🍝 1 cup oatmeal
🍝 3 cups spinach
🍝 1/4 shredded Parm cheese
🍝 1 pound ground hamburger
🍝 pinch of red pepper flakes
🍝 salt
🍝 pepper
🍝 1/2 tsp Basil
•Instructions•
1️⃣ Preheat oven to 375 degrees F. Begin to warm up 1 tsp avocado oil. Cooking onions and garlic in a pan for 5-6 minutes or until translucent.
2️⃣ In a large bowl combine cooked onion & garlic, egg, oatmeal, spinach, Parm cheese, salt, pepper, basil, red pepper flakes and hamburger. Mixing with your hands until combined.
3️⃣ On a baking sheet covered in tinfoil sprayed with cooking spray begin placing your meatballs 1 inch a part on the pan.
4️⃣ Bake for 15 minutes and then transfer into a pot full of sauce of your choice (I used prego mushroom). Cook for an additional 5-10 minutes.
5️⃣ Serve with noodle of choice.

I get messages 📱 OFTEN asking how we’re able to maintain eating at home so much! Well let me break it down for you:
1. Planning ; it was my husband’s idea to plan out our weeks worth of meals every Saturday or Sunday! Then we could plan around what we a) already had and b) could spend 💰 less at the store! When we shopped just for what we needed, grocery bills went WAY down 👋🏾. Don’t get me wrong, we still do 1 big @costco trip 🚗 a month though 🙃
2. Quick stuff! We plan out easy meals that I can make ahead of time (@ninjakitchenuk crockpot is my life) and we also try to make meals that are under 30 minutes! Throw some carbs 🍚, veggies 🥦 and protein 🥩 in a bowl 🍲 and you’ve got a meal every time!
3. We TRY to limit ourselves to 2 times a week eating out! We realized that eating out is more for convenience than taste (😜) so we figured why not just say what we are craving and make it! We do try to make 1 night a week easy on me but let’s be honest, I love ❤️ cooking! 👩🏾‍🌾👩🏾‍🍳
