I’m so loving these 80 degree winter days! (Sorry east coast fam!) Yesterday, I attended a fabulous patio brunch with the very beautiful & very talented author @joannavolavka, photographer @lisakimberly11photography and hair stylist @mrs.d.henry at the very delicious #PardonMyFrenchSD. As we bathed in sunshine & champagne, Joanna told us “horror” stories of winter living in Chicago. I laughed when all of us gasped at the thought of closed patios for 7 months of the year! 😂 We really are spoiled here in SoCal and I wouldn’t have it any other way! Navy life has had us call many different places home but no other city has my heart like San Diego! 💛
Warmer winter days also calls for lighter fare! Today’s #meatlessmonday is a take on my favorite Greek village salad from #Apollonia’s. Typically, it’s served with warm lentils but today I’m swapping out Israeli couscous cooked in a simple veg broth with oregano and bay leaf. Paired with fresh bell peppers, red onion, and feta cheese lightly tossed in EVOO, lemon juice, fresh mint and S&P. That’s it! It’s perfectly light and bright with enough carbs to get you through your #monday without feeling bogged down! This #mealprep staple salad holds up amazingly in a jar for your busy day and leftovers taste even better on day 2 and 3! .
