MEAL MONDAY!
Each Monday we will be posting a meal/recipe idea that you can try at home. They will be quick and easy (if I can do it anyone can do It). There are so many great ways to incorporate great nutrient dense foods into your diet with out getting bored so here's hoping we inspire your inner chef!
This weeks recipe is banana pancakes! I've made these countless times and they always go down a treat. They are ridiculously easy to make and you only need 3 ingredients! You can experiment with various topping ideas if you're feeling creative. Let us know how they go!

I used a Parmesan type of sauce that was a little sour cream, some cream cheese, half and half and then 1/4 cup of Parmesan cheese. The sauce wasnโ€™t bad at all I just donโ€™t think that I liked the combo very well. Iโ€™m kinda a veggie snob and when I try to imitate a โ€œpastaโ€ type of dish without the noodles I donโ€™t want to be able to taste the veggie which I could a little too much for my liking๐Ÿคท๐Ÿปโ€โ™€๏ธ

I love potatoes. I just really really do. I mean does anyone really not like potatoes? Show me a person who doesn't like fries or mashed potatoes? (Weirdos ๐Ÿ˜) well, last year around the holidays I was so worried about all the food and sweets that would inevitably come with thanksgiving and Christmas that I started creating a list of foods I "shouldn't" eat. Potatoes was on that list. I told myself that potatoes were too full of carbs and off limits on thanksgiving. Have you EVER heard of a thanksgiving without potatoes?! But I was so obsessed with my weight and body image that I was blinding myself to what healthy truely was. Well this year I'm not swearing off and not obsessing over the upcoming holidays. Sometimes what we claim is "healthy" is really just self obsession. For many years in college(and after) I was chained to excessive dieting and exercise. I masked the obsession by claiming I was just being "healthy." The truth was I wasn't trying to be healthy,but to fit this mold of "skinny fit girl" I lost site of what true health and wellness really is. Unstuffed Cabbage Roll is where it's at if you're looking for an easy and delicious weeknight meal that fits into your Paleo or Keto lifestyle. Low carb high yum for suresies!! Here's what you need:
1 - 2 Tbsps avocado oil
1 small onion, diced
2 cloves garlic, minced
2 lbs ground beef
1 small cabbage, chopped
1 (28 oz) can crushed tomatoes
1 (14 oz) can diced tomatoes
1 cup water
1 heaping Tbsp chili powder
salt & pepper to taste

Here's what you do:
In a large skillet or Dutch oven, heat avocado oil (coconut oil works too!). Add onions and stir until translucent. Add garlic and stir til it smells amazing (about 30 seconds). Add beef and cook til no longer pink.

Now add cabbage, both cans tomatoes, water, and spices (I had some portobello mushrooms on hand and tossed them in too). Bring to boil, reduce heat to low, cover and simmer for 30ish minutes.
