Anyhow, here is how you make it:
Chop the onion and potatoes in small cubes and fry in butter. Fry the onion on medium- heat with some sugar and salt, and the potatoes in medium+ heat until they are golden crispy. Fry chanterelles on high heat with lots of butter and salt.
Mix one egg yolk with 1,5 tbs Dijon, add a few tbs of oil, salt and black pepper and whisk it until it becomes a creme. Grill or fry the beef fillet.
