Aloha 30 Day No Meat Challenge Champions! I have been craving a little quick snack remix of items that could give me a boost..a little juicy and flavorful at the same time...easy one that doesn't have to look purrty...but why not play with your spinach...? In order from bottom to top.. Crispy #Corn tortilla(I eat at least one a day...and I'm about to get on my spelt roti's soon)...layer of #hummus...#blackbeanburger...layer of hummus...lightly barely hardly #sauteed#spinach ...layer of hummus(you feel me)...lightly still crispy soft and wet #cherrytomatoes ..topped of with two or three #capers... and some pickled #redpeppers and small #greenolives dancing arount the plate with spinach leaves and #mashedsweetpotatoes... Put the utensils to the side and eat it with your hands...lick your fingers...then tell me how you felt after you wash your hands...because that's the right thing ta do! You got this!
