It was so hot ☀️ today that I decided to get some coconut 🌴 yogurt ice cream 🍦 w/ rhubarb compote and different kind of nuts (brazil nuts, pecans and almonds).
The recipe for the rhubarb compote:
2 tablespoons of sugar
Maple syrup 🍁
First, cut the ends of the rhubarb and peel it, then cut it in dices and cook it with 125 ml water and the sugar on medium/low heat and cover it. After 10 minutes mix the starch with 25 ml water and two tablespoons of maple syrup and add it to the rhubarb. Season it with some more maple syrup and cinnamon until it has the desired taste. Serve it hot over the ice to have a great contrast!
