Hey guys welcome to #WhackyWednesday why well @manlymancio challenged me to Grapefruit challenge a little while ago & I finally created a grapefruit forward drink!
This one is made of a number of components using the wonderful #Pampelle Aperitif & amazing #MalfyGin Rosa so less talk more action! Oh yes and my first shot at making Jello shots as a tasty garnish!
THE GRAPEFRUIT - REMIXED!
50ml @xecowines Fino Sherry
30ml @pampellerubyred Aperitif
30ml @malfygin Malfy Gin Rosa
40ml Grapefruit reduction
30ml Fresh squeezed & sieved grapefruit juice
5ml lemon juice
Shake with a rosemary sprig
3 dash Fee Brothers Rhubarb bitters
Add all to a shaker with ice, shake well for 30 seconds, strain into a Collins glass with half filled with ice. Topped with Mezcal foam made with iSi Whipper
60ml Grapefruit juice
1.5 tablespoon fresh Rosemary leaves
4-5 gratings of nutmeg
2 cardamoms slightly crushed to open up
Bring to gentle simmer, simmer for 6 mins. Then remove from heat leave to infuse for 1hr. Sieve out solids and store in fridge to chill
20ml Velvet Falernum
10ml @monin_uk vanilla syrup
30ml grapefruit juice
20ml lemon juice
10ml @williamfoxuk gomme
2/3 Pipette @BettersBitters Foamer
PAMALFY JELLO SHOT
40ml Malfy Gin Rosa
1.5 Tablespoons Agar Flakes
140 ml water .
Gently heat water + Agar, don’t stir, till boiling. Then stir & simmer for 5 mins. Add cold Pampelle + Malfy, stir & simmer for 5mins. Pour into grapefruit skins (fruit spooned out) that are placed in a cupcake tray. Leave to set in fridge for 2-4 hrs
