Leftovers. The more I learn about the world we live in and how much we waste, the more I’m finding it an imperative to stop being so wasteful. A few weeks back I made pulled pork for 40. There was a small amount left, so I froze it to use at a later date. Today I turned one of them into a Frankenstein of a dish. It’s a nachos, but with super crispy wedges instead of corn chips. Topped with chipotle, white onion, coriander, baby gherkin, apple cider vinegar, fresh mozzarella and slow smoked, pulled pork shoulder.. it was absolute heaven. Just as, if not more delicious than something I would have made for myself from scratch. We have a beautiful planet, and every little decision we make counts. Say no to unnecessary plastic, and yes to not being so wasteful!
