Excuse the radio silence over here but things have been a little crazy between moving my mom across the country and getting ready to start work! The past 6 weeks have been incredible and a much needed break. I read books, slept in, visiting friends, and just enjoyed being off. Tomorrow, is my first day as an attending and I can't believe it! I am both excited and nervous, but mostly excited! I love my new practice and I am so grateful that I am joining such a supportive environment. One thing that I will have to get used to? Packing my lunch! There is no cafeteria right downstairs so I'm going to have to get better about planning ahead 🤔 so I made this kale raddichio salad with farro from one of my FAVORITE cookbooks. This recipe is easy, delicious, and healthy. It also calls for Parmesan cheese, but I like to sub pecorino Romano and decrease the amount a bit (it calls for a lot of cheese)! The great thing about kale is that it tends to absorb the dressing and tastes even better a day or two out, so it is a great make ahead salad 🥗 what are your favorite recipes for make ahead lunches?
