This must be a great week for food because dinner last night turned out so good!!!! This #vegan#padthai was based on a #minimalistbaker#recipe for #noodlefree pad Thai...... But noodles are so good! So I added one serving of rice noodles and reduced my veggie 'noodles' by a serving. I love how marinated #tofu is used in this recipe to replace egg.....the tofu was light and fluffy and very reminiscent of real egg (and @vietfun411 could eat it without getting sick so that's a bonus!). I used more tofu than called for to add protein and stretch the 2 portion recipe to 4 (and cuz tofu doesn't come in half cup packs and waste not and all that). This recipe is going in my make again list!
Made this recipe from blog of @katieworkman100 - delicious! I wasn't hung up on the size of my shrimp; the goal was to use up an abundance of goat cheese and frozen shrimp. When local pew shoots popped up at the market, it was perfect luck! #mealplanning#usewhatyouvegot#makeagain
Vegan nacho cheese! I'll be honest, the recipe says it tastes exactly like nacho cheese, but it doesn't. The texture is different, for sure. But that's not to say that it doesn't taste wonderful! I like it a lot and so does P! It's a winner :) #makeagain#august122017
I think I like the food prep process most when I'm cooking. My heart is singing, most times that's when I have a glass of wine going🍷 and I'm just filled with gratefulness for my family 👪 and occasional guests! Healthy eating is so much fun. 🍽
