BBQ jackfruit and veggie bowl // today. today was one of those "use what's in left the fridge" days, but I'd say it turned out pretty dang tasty. I threw together leftover BBQ jackfruit, roasted sweet potato and broccolini in avo oil at 425 for 30 min, black beans, corn, @majesticgarlic garlic spread all on butter and romaine lettuce for a nice crunch. I also wanted to make an avocado-cilantro dressing...but was all out of 🥑 (😱) so I blended 1/3 cup @sirkensingtons avocado oil mayo, bunch cilantro, salt+pepper, squeeze lemon and some h2o for consistency - which turned out perfect. i mean...chipotle who? 😜 hope y'all are crushin it today!
