One of my favorite meals is sweet potatoes 🍠, peas, and cottage cheese! I ate this cold as it was right after workout before I ran errands. When eating cold or uncooked starches they prove something called resistant starches. Resistant starches resist digestion and as it passes through your intestines it feeds the healthy gut bacteria and allows for effective fat oxidation. Cookie stuffed protein muffin?! YES please 😍🍪 - - Yesterday's procrastination baking turned into this delicious creation 👌🏻 This is just my standard protein muffin recipe but with a ball of @dohprocookie pushed into the centre before baking! Full recipe below 👇🏻 - - ▪️150g cooked butter nut squash ▪️2 egg whites and 1 full egg ▪️1 large banana ▪️50g protein blend (I used @questnutrition peanut butter protein which I got on offer from @postedprotein ) ▪️heaped tbsp coconut flour ▪️Pinch of baking powder BLEND all the wet ingredients and then mix in the dry. Split into 9 muffin cases and push a small ball of cookie dough into the centre of each 🤤 Top with granola and bake for 20 mins at 180 degrees!! ENJOY 🙌🏻
