Lunch consisted of mackerel fish with some summer salads. I’ve mainly been eating oily fish, and spinach forms a part of every plate these days. Fish lunch. Feeling very under the weather still so needed something filling and full of good stuff. Did a one bag steam bake of mackerel fillets, plum tomatoes, garlic, red chilli, coriander and lemon. Wow! What a tasty lunch! Using baking paper I layered the bottom with lemon slices and some of the chopped garlic, chilli and tomatoes. I then laid the fillets on top skin side up, seasoned with a bit of sea salt and put the rest of the chilli, garlic and tomatoes on the fish, plus a bit of fresh coriander. A little bit of water to aid the steaming then wrapped over the paper and popped in the oven at 190 for 25 minutes.
