Making use of an excess amount of carrot tops I was gifted at the #portlandfarmersmarket this past weekend. So many awesome leafy greens get discarded or head straight to compost because they don’t meet conventional culinary standards. If you don’t see something in the store you might not know you can cook with it!
Cauliflower leaves, beet greens, and carrot tops are all unconventional ingredients but super nutritious and easy to use! I made an amazinggg sunflower seed and carrot top pesto for a fresh summer stir fry. So good 😍and a great way to create a #lowimpact meal.
