Keto bread courtesy of @keto.connect. I substituted Swerve for liquid stevia and I don’t have a regular loaf pan, but this was good! I need to get some liquid stevia because it’s quite sweet with the Swerve - more like cake. Still a win! 1lb down this week. My office Christmas party was on Saturday so....there’s that! Happy Monday!!

Today's healthy baking experiment was this mango coconut bread. Gluten free. No added sugar. 💯 deliciousness. Because healthy should taste good.
I didn't pay attention to exact measurements (as per usual with how I cook...) But here's a rough estimate of how I made this:
-2 ripe bananas
-4 small eggs... fresh from the chickens in the backyard :-)
-1/4 cup coconut yogurt (or you can use regular unsweetened yogurt or coconut cream)
-1/3 cup coconut butter
-1 teaspoon vanilla essence
-1/4 teaspoon salt
-1/4 teaspoon baking soda
-1 teaspoon baking powder.
-stevia to sweeten.

Blend all above ingredients in blender until smooth, pour into a large bowl then stir in:
-1 cup almond meal
-2/3 cup green banana flour (or replace with another flour such as cassava, oat, quinoa flour etc).
-1/3 cup shredded coconut
-1/2 to 2/3 cup sugar free chocolate chips (I use @lilys_sweets_chocolate ).
- diced mango (I used 1 1/2 mangos).
-
-Line a loaf tin with baking paper and grease it, then pour in the mixture. Bake in a preheated moderate oven until cooked through.
I find the texture of this is a little nicer once it cools to about room temperature or cooler as it let's the loaf set. Also, as I mentioned this is a rough estimate of ingredient quantities used so experiment a little if needed.

CHEESE BREAD SANDWICH

This recipe is for the Cheese version of my bread. I will share the plain version soon.

I kid you not, this particular version tastes like a rich creamy sandwich, fish pie and meat pie all rolled in one.
FOR THE BREAD: These are the ingredients: 🧀 1 1/2 tablespoons of unsalted butter
🧀 2 tablespoons of coconut flour
🧀 1/2 teaspoon of baking powder
🧀 1 large egg
🧀 1/4 heaped cup of grated cheddar cheese
🧀 1/8 cup of grated mozzarella cheese 🧀 A pinch of garlic powder
🧀 A pinch of dry chilli flakes
🧀 A pinch of dried parsley

INSTRUCTIONS

1. Melt butter in microwave for 20 secs.
2. Add raw egg, baking powder, coconut flour, cheeses, garlic powder, chilli flakes and parsley.
3. Mix all the ingredients together thoroughly and pop into microwave for 3 minutes.
4. Bring out and turn mug over on a flat board and allow to cool.
5. Cut into round slices.
6. slather on sandwich paste on each alternate slice.
7. Pile each slice on top of the other. Cut into 2 sandwiches and serve.

FOR THE SANDWICH PASTE: These are the ingredients... This is how I make the paste for my low carb sandwiches. I've got sardines, cucumber peeled and finely diced. Finely chopped red onion, sausages grilled for 3 mins in the microwave and grated. To it, I add a full tablespoon of healthy mayo, mix and layer it on my low carb bread. You can also prep this mixture and store in the fridge. It comes in handy when you want to make a quick snack.

NOTE: Imagine breaking your IF with this and a tall glass of Greek yoghurt/ frozen berries smoothie or a cup of coffee? Tell me how hunger will near you? Any hunger that nears you after this must be specially composed by your village people and not, Leanation.😂 (Some microwaves can cook it in 90 secs, but I found 3mins to be ideal, so check which timing is better for you.)

Low carbs, extra fiber and anti-inflammatory BREAD!😍 My recipe
1tz almond meal, 1tz Psyllium Husk, 3 eggs, 1/2 tea spoon turmeric, pinch of pepper, salt, 1/4 tz water.
Mix all your ingredients and form your bread. Cook it for 10 minutes in the oven at 220 degrees 🍞

Who made the ALMOND FLOUR TORTILLAS ? 😋 those become a routine in my house. We make those almost each week as a side to Indian curry or to wrap lunch. It is one of those recipe that is 100% keto/low carb AND vegan gluten free so I can share it with my WHOLE family, which makes me very happy !

Back in the Gold Coast and breakfast @brio_emporium . We started with a cup of Thai chicken broth (delicious) and I opted for the seeded toast, one with avo & tomato the other with avo, tomato & mct oil. Hubby had the breakfast bowl with brisket. Banana Walnut bread.

I was afraid of doing gluten free or keto bread because my first few tries before all tasted eggy and I didn't like the taste of it 😣! Thanks for the special request of my friend that I got back to it and found a recipe that made me change my mind into baking gluten free breads!!! This is dinner @simply.keto I made @ketokarma ‘s #ketochili recipe. It’s amazing. And I made @gooddeesmix #lowcarbcornbread and this turned out to be a really good dinner. (In the picture) That’s pork sausage in one skillet and hamburger meat in the other skillet. I added a few things and touches of my own to both recipes. Such as I’m not a fan of green peppers so we had orange and red peppers. And with the cornbread I added a couple packets of #splenda and a big spoonful of #jalepenos and I topped the bread with @kerrygoldusa #butter The whole meal was amazing and #husbandapproved 😊 Now with that said I had my one allowed cheat meal for this #ketochallenge this morning for breakfast and it was sausage gravy over toast. I made my husband sausage gravy this morning and I wasn’t going to eat any....but at the last minute I decided this would be my one and only cheat meal. So now it’s balls to the walls. I have no cheat meal in my pocket. And that really was keeping me feeling “safe” and anyone who is a #bingeater might get that.
