Asian Noodles inspired by Pad See Ew: I always crave asian noodles while eating low carb and this is the best substitute I have found. For those of you not familiar with shirataki @miraclenoodle , they are 97% water and the rest is made from a konjac yam. They are a thin, translucent, gelatinous traditional Japanese noodle and have almost zero calories and carbs, so they’re perfect for when you’re craving noodles. Which is always for me. .

Ingredients: 1 packet of shirataki Miracle Noodles (Angel Hair or Fettucini), 2 tsp sesame oil, 1 minced clove of garlic, 2 tbsp soy sauce, 1 tbsp rice vinegar, 1/2 tsp sriracha, 1 tsp toasted sesame seeds, 1 egg, and 1 tbsp chopped green onions. I added 2oz of chopped precooked chicken to this dish to add some extra protein.

Preparation: Rinse shirataki noodles thoroughly and let dry. Put 1 tsp of sesame oil in a pan on medium high for 1 minute until the pan is hot. Add the shirataki noodles to the pan and cook for about 4 minutes, periodically stirring. Lower the heat to medium, add a little more sesame oil and the garlic and cook for a minute. Add the chicken, soy sauce, rice vinegar, sriracha and toasted sesame seeds. Cook for about 4 minutes, until the sauce cooks down, becomes less liquidy and starts sticking to the noodles. Remove everything from the pan with a spatula (so you can get out the sesame seeds) and place in a bowl. Lower the heat to medium low, add a little more sesame oil and scramble the egg until just cooked. Add that over the noodles. Top with the chopped green onions. I used to have instant noodles a lot when I lived in China and they always remind me of train adventures. Now my favorite quick meal is bone broth with ginger and chilli, throw in some veggies like napa cabbage and a poached egg. As fast as instant noodles but way more nutrients!

Teriyaki stirfry on top of @miraclenoodle rice 😋. Stirfry is one of my faves because it comes together so quickly, and you can use almost any protien and veggies you have on hand.

Today i did ground beef + french green beans seasoned with Green Mountain soy sauce, garlic, salt, sesame oil, powdered stevia, chili pepper oil, and finished off with Seal Sama sugar free teriyaki sauce. It was a hit with me and my husband!.

Tip - to save on carbs, dint cook wirh the seal sama teriyaki sauce. Add it at the very end and you won't need as much to flavor your dish.

Finally got around to trying the #sealsama sugar free teriyaki sauce, and it was so good! Kicking myself for waiting so long to break open the bottle! It IS sweetened with splenda, so will just be an occasional treat. I got mine from netrition.com.
I also used it sparingly, about 2.5tbsp for a big pan full of veggies (4 good sized servings). I stirfried some carrots, red peppers, broccoli and french green beans. I added some of my favorite soy sauce (golden mountain seasoning sauce), garlic powder, salt, hot chili oil, and then the teriyaki sauce. My husband gave it 🖒🖒.
