This week’s meal prep is inspired by all the wonderful recipes I got from the 2018 Dietitians of Canada Conference in Vancouver BC, from June 6-9, 2018. I learned so much and was inspired by so many dietitians! 😊 Thank you @dietitianscan!
Top: Shrimp stir fried with herbs de provence, lentils, wilted tomatoes and snap peas with feta cheese
Breakfast: vanilla protein oats mixed with chia seeds and pumpkin spice, topped with strawberries, pumpkin seeds, walnuts, and coconut flakes
Bottom: Baked tofu crusted with a spicy peanut butter marinade, edamame, quinoa, and shredded carrots
