INGREDIENTS: - 4 cups chopped lettuce
- 2 cups grape tomatoes, halved lengthwise
- 2 Persian cucumbers, chopped
- 1 can chickpeas, rinsed
- ¼ cup pitted Kalamata olives, halved
- ¼ cup finely chopped red onion
- 4 ounces cubed feta cheese
- Red wine vinaigrette (recipe on the blog)
DIRECTIONS: - In a large bowl, combine lettuce, tomatoes, cucumbers, chickpeas, olives, onion, and cheese. Drizzle with vinaigrette and toss to combine.
