My mom and dad came in town this weekend which basically made my month! My mom and I chatted about a book she's been reading called "How Not to Die" by Dr Michael Greger of @nutrition_facts_org. I'm looking forward to reading it myself but long story short, it has inspired my mom to eat more veggie-based which in turn is inspiring me. I have 4 veggie dinners lined up for this week! We started tonight with this Golden Red Lentil Dal with Cilantro Speckled Rice by @ohsheglows and the whole family devoured it. I finally made these 🖤 Black Bean Brownies 🖤!! They have been on my to-do list for months!

Since these aren't your typical brownies, the ingredients contain some pretty impressive health benefits!
.
Black beans have a substantial amount of protein and fiber. Don't be afraid to bake with them! They have a mild flavor and actually make the brownies rich and creamy.
.
Coconut oil has been shown to help improve your cardiovascular system.
.
Honey - the only sugar source in these brownies (eh hem besides the chocolate) -contains phytonutrients which are full of antibacterial and antiviral properties that help support the immune system!
.
Ingredients:
1 (15 oz) can black beans, drained and rinsed
2 large eggs
1/4 cup cocoa powder
2/3 cup honey
1/3 cup coconut oil (keep it solid for a flakey texture, or melt it for a fudgey texture)
1/2 tsp baking powder
Pinch of salt
4 drops Peppermint essential oil (or try Wild Orange or Cinnamon)
3/4 cup chocolate chips (I used a full cup because - chocolate 😍)

Directions:
🖤 Place all ingredients in food processor (or blender) and blend until smooth.
🖤Stir in 1/2 cup of chocolate chips.
🖤Pour batter into greased 8x8 in pan and top with remaining chocolate chips.
🖤Bake for 30 -35 mins at 350 F until toothpick comes out clean.

INGREDIENTS: - 4 cups chopped lettuce
- 2 cups grape tomatoes, halved lengthwise
- 2 Persian cucumbers, chopped
- 1 can chickpeas, rinsed
- ¼ cup pitted Kalamata olives, halved
- ¼ cup finely chopped red onion
- 4 ounces cubed feta cheese
- Red wine vinaigrette (recipe on the blog)

DIRECTIONS: - In a large bowl, combine lettuce, tomatoes, cucumbers, chickpeas, olives, onion, and cheese. Drizzle with vinaigrette and toss to combine.
