This is Soba with Mushroom & Crumbled Hazelnuts from Love and Lemons. It’s a mushroom and hazelnut type of pasta with soba noodles instead. It has like everything going for it and I picked a lovely mix of mushrooms, but unfortunately, this didn’t do much for me. It’s fine, but not special and we kind of missed a sauce (it only has a bit of rice vinegar and soy sauce). I did like the idea of crumbled hazelnuts though. x Elske

Another great autumny salad to add to your repertoire before the season ends😊 At home, even those who are not big fans of brussels sprouts liked it!! The dressing is key 🤩
#homemaderecipe based on the brussels sprouts, feta and pomegranate salad by @loveandlemons (search for “Roasted Brussels Sprouts, Many Ways” online 😉)
* 1kg Brussels sprouts, halved
* Olive oil
* 1/4 cup tahini
* 2 tbsp lemon juice
* 1 garlic clove (I have roasted it, details in the method and obs sections)
* 1tsp maple syrup (the original recipe calls for 1/2tsp but I found I needed up to 1)
* Up to 3 tbsp water
* 1/4 cup feta cheese
* 1/4 cup pomegranates (aprox 1 little pomegranate)
* Salt and black pepper
1. Preheat the oven to 200C, fan assisted (without fan 220C). 2. Place the brussels sprouts on a baking tray, drizzle some olive oil and season with salt and black pepper. Place the garlic clove in the tray too.
3. Bake for about 30min until the brussels sprouts are roasted. Check after 20min as if they are small they would probably be done by then.
4. While the brussels sprouts are baking, you can clean the pomegranate (no need to do it in advance) and prepare the dressing (except for the garlic): in a small bowl, whisk together the tahini, lemon juice, maple syrup, water and salt. I added the 3 tbsp of water too to get my preferred consistency. Once the garlic clove is roasted add its flesh to the dressing.
5. In a bowl place the brussels sprouts, the pomegranate, crumble the feta (I do it with my hands :p) and drizzle as much dressing as you want.
✔️The original recipe calls for fresh garlic, but I think that roasting it brings a delicious smokey touch and it is not that strong. Since you are already turning on the oven for the brussels sprouts, you are not wasting energy for just 1 garlic clove.
✔️You can add nuts to this salad too. The original recipe calls for hazelnuts, but you can also use walnuts or almonds which you can roast in the oven. I haven’t used any this time.
✔️You can make the dressing as runny as you want by adding more water.

Ever have a meal that totally reminds you of childhood? 🧐 This meal is exactly that for me! 🤗 My mom, sister, and I went to @noodlescompany every Wednesday after gymnastics practice in high school. Creatures of habit much? 😂 My favorite thing to order was their pesto cavatappi with Parmesan crusted chicken! 🍽 I decided to recreate a healthier version of this childhood favorite by subbing out the noodles for yellow squash noodles (soodles...? 🥴)! It’s filled with so much flavor - @loveandlemons homemade pesto, heirloom tomatoes, mushrooms, and the most delicious Parmesan chicken (recipe below)! I think I may be giving @noodlescompany a run for their money! 😝

Ingredients for Parmesan crusted chicken: * 1 lb. boneless, skinless chicken tenders * ½ tsp. salt * 1/3 cup flour * 2 eggs * 1 tsp. Dijon mustard * 1 cup Panko breadcrumbs * ½ cup shredded Parmesan cheese * ½ tsp. dried basil * ½ tsp. dried oregano * 2 tbs. olive oil * •

1. Preheat oven to 400 degrees.
2. Place chicken tenders on a plate and season with salt and pepper.
3. Set-up your assembly line to coat the chicken using three bowls. In the first bowl, mix together flour and salt. In the second, whisk together the eggs and Dijon. In the third bowl, combine the panko breadcrumbs, parmesan cheese, basil, and oregano.
4. Gently coat both sides of each chicken tender in flour. Dip it in the egg mixture and then generously coat in the Parmesan and panko mixture.
5. Heat 1 tbs. olive oil in a frying pan over medium heat. Working in 2-3 batches (i.e., two chicken tenders at a time), sauté the chicken tenders until browned and crispy, about 3-4 minutes per side. Be sure to add additional olive oil in between batches.
6. Remove from heat and place chicken on a baking sheet. Bake at 400 degrees for 15 minutes. 🙃

Chicken tenders stay well stored in an airtight container in the fridge for up 4 days. I find they re-heat best in the oven, as the coating tends to get soggy if reheated in the microwave.

The recipes I’ve tried in the @loveandlemons cookbooks have been fantastic so far!
My favorite thing about this book is that it is categorized by ingredient, not meal type. So if you have some carrots you want to use, go to the carrots section and BOOM, several recipes with carrots.
All recipes are heavily focused around vegetables and have vegan optional instructions.
By the way, this pasta was 🔥.

Last night I tested a coconut macaroons recipe posted by @loveandlemons recipe by @ohsheglows, and I adapted the treats to be #nutfree #allergenfriendly
These macaroons are the B O M B! I used sunflower seed flour and kept everything else pretty much the same except for the chocolate part. I didn’t dip mine in melted chocolate. I simply drizzled a mixture of raw cacao powder mixed with a little coconut oil, and organic maple powered sugar. #gftreats #vegandesserts -
