This could be my new favorite thing, roasting whole heads of garlic.
Peel away the outer papery layers of the whole bulb leaving the skins of the individual cloves intact. Cut about a 1/2 inch of the top off, exposing the individual cloves of garlic. Place in a baking ramekin and generously cover the whole bulb with olive oil. Cover with foil and bake at 400° for 35-40 minutes or until the cloves are soft. The cloves were perfect and spread like butter over our warm foccacia bread. Now I'm eager to use them for everything! Pasta, pizza, potatoes, endless possibilities!
