This is a super easy snack/ lunch side! Chop up some organic tomatoes (Cherry, Roma, whatever is on sale + organic is what I use) add some pesto, drown in balsamic vinegar. That's it! It's basically a Caprese salad without the fresh mozzarella. If you want to add it, by all means go for it! I just prefer for my daily cheese calories to come from a tangy, sharp cheddar so I don't use cheese in this (I do not count calories nor do I recommend it!!! I just eat in moderation so I try not to go overboard on cheese consumption since I literally eat it every single day). I think it tastes just as good without since mozzarella is such a mild tasting cheese- I don't miss it! Make sure the balsamic vinegar you are using doesn't have caramel coloring added! A LOT of them do! Caramel color is known to cause tumors. Also, don't buy a store bought pesto unless it's organic! It can contain bad oils and unnecessary additives. Pesto is so much better homemade. I don't even bother with the pine nuts. I just use a little Asiago or Parmesan, lots of basil, garlic, salt + pepper, olive/avocado oil, and some spinach leaves! I'll make a big batch in my Nutribullet, dump into a mini ice cube tray, and freeze them. Then I store in a glass Tupperware in freezer. Pesto freezes beautifully and thaws quickly so any time I need pesto, it's ready! I don't even need to thaw the pesto unless I'm eating right then. It'll thaw on its own just sitting in the fridge by the time you're ready to eat it if you just toss one in with your tomatoes the night before. PS- basil is such an easy herb to grow on your window sill!
