Sometimes a gal just needs a breakfast pizza! Super easy to make and easy to adjust to your liking. .
Take any tortilla or flatbread you like, top with a base (this morn's blend is @kerrygoldusa sautéed red onion, mushroom, and spinach), sprinkle some of your fave cheese on there (today's Monterey Jack is simple melty perfection), then crack a few eggs on top. If you're worried about your eggs spilling over, just finagle a few little spaces for them to nestle in. Bake at 425 for 10 minutes- or 450 for an extra crispy crust- then turn oven off and let it be until eggs are to your liking. These are hard and cooked, despite appearances. If you like yours softer, just take 'em out earlier! Top with basil and red paper flakes or whatever your tummy desires. Slice & gobble. 🍴🍳🍕 #breakfastpizza #lightandcrispy
