How about this manifestation? I was chatting with my friend @friendly_cat the other evening and she showed me a mysterious fruit supposedly grown in Indonesia, called kawista. It looked interesting, so I made a mental note to try it in case I'd see it somewhere while I'm here in Java. Lo and behold, the next morning Lindsay @durianwriter comes back to our room after her run and goes, "this is for you", handing me a woody ball - my jaw dropped because it turned out to be the kawista fruit! It is actually a citrus (Limonia acidissima), also known as wood apple (due to its thick, hard rind) or elephant apple. Trying it was a very interesting experience. There wasn't much of a flavor (just a teeny tiny bit sour, somewhat reminiscent of tamarind), I guess this fruit is more about texture: very dense, moist but crumbly, with crunchy seeds. I felt as if I were eating soil, but in a really cool way, if that makes any sense 😁 (swipe left to see how it looks inside)

HOW MUCH CALORIES do you eat in a day? To be honest I have no clue. I stoped counting calories years ago because it drives me nuts. I used to regulated myself to stay skinny. Almost immediately when I started to eat raw vegan I stoped counting calories. I mostly tracked them to make sure I eat enough. In the beginning I gained weight (around 10 pounds) but that was ok. Over time my body realized that he gets enough energy and nutrition every day and let go of all the extra weight. Since then I kind of keep my weight. Sometimes I eat more. Sometimes I eat less. But I always eat until I’m satisfied. I guess most of the days I score around 2000 kcal, but as I said in the beginning I actually have no clue. I don’t believe in calorie restriction because in my opinion this makes the body think there is a lack of food and as soon as there is enough food the body will stock up in case this happens again. When you always eat enough your body don’t have to stock up or worry about it. Are you still counting calories? What is your take on that?

Dates have been a staple in my diet, especially in winter time, when good quality fruits are not always easy to find.
Since dates are low in water content and sticky, I usually eat them blended into a smoothie, raw soup or salad dressing 👩‍🍳

Though I'm a juicy fruit kind of girl, I totally recommend trying different varieties of raw dates if you get the chance. I've tried medjool, deglet, zahidi, honey, halawy, & khadrawy - each a fully unique taste experience! After deglet, which have peanut buttery notes, I like halawy the best (tastes like wildflower honey, but vegan!) 🐝
If you can, try to source them raw & from the current season's harvest. Dates sold in stores are often from a previous year's harvest, and may have been heat treated.

Soursop fruit came in! If you’ve never tried soursop fruit before, you must. It tastes exactly like a sweet green apple jolly rancher candy! It looks prehistoric yet it’s rich in sweet flavor! It’s a type of cherimoya and it’s a favorite on my list. Why eat those tiny unhealthy “poison pill” jolly rancher candies when you can have fruit bigger than your hands that tastes just like the candy only better? You can’t beat being raw. An example of something a little different for me.
Dates - even the gooey, juicy ones - leave me feeling sorely dehydrated, and frozen foods just don’t hold a candle to fresh & in season.
But somehow, when these two are blended together with ample water, it makes an ultra-refreshing drink that’s only second best to the way unprocessed fruit makes me feel.
A while back, I made a video sharing my top health tip: hydration 💦
Hydration is fundamental in every single way to the human body. From fluidity between vertebrae in the spinal column preventing back pain, to proper functioning of digestive enzymes for absorption of nutrients ...water is life.
I like to get my water organically, with the foods I eat. 🍉 But in these winter months of drier air & fewer juicy fruits, a smoothie like this is a nice alternative now and then.
Change up the amounts of the three ingredients in this drink to make blueberry jam, syrup (great with banana ice cream!), a smoothie bowl base, or pie filling (blueberries have moderate pectin, which allows it to firm up well if left to set in the fridge). Also, soak your dates in water before (& store in the fridge) for smooth blending!

So, Keith and I have been working on perfecting our raw vegan pizzas.
Oh my, they are delicious!!
As of now we just use the oven to dehydrate our portabello caps on the lowest temperature for about 2 hours.
Then we spread on a layer of our raw, sundried tomato marinara, before adding the most divine cashew cheese
(a recipe we found online).
Toppings for these were onions and fresh basil slivers. Recipe details soon to come!

Yes, I had the banana blueberry waffles again this morning. They’re just so good! I used to eat nicecream almost every morning and these are becoming a new favorite. It’s nice during winter time because they’re warm. Don’t get me wrong of course I’m still going to eat nice cream. 😁💞🍌

Homemade, gluten-free quinoa pizza with a crunch, & grounding toppings which has made this pizza my favorite.😋 Where should I start - the crust or the toppings? OK, I will start with the toppings, because the crust recipe is below.👍 The kick-ass topping is, if you can believe it, baked butternut squash! Love it!👌 I baked the whole organic butternut squash at 400°F for about 40 to 50 min, then mashed the desired amount (& chopped it’s peel). Added generous amount of this baked squash on the baked pizza crust, & topped with more goodies such as onions, bell peppers, kale, mushrooms, & some fresh tomatoes.🍅 Once out of the oven, I topped it with some fresh basil, & a bit more onion (kinda love onion).

Here's the pizza crust recipe:

1 Cup Quinoa (dry)
1 Cup Filtered Water
1 to 3 Garlic cloves
1 Tsp Himalayan Salt
1 Tsp Dried Thyme
1 Tsp Dried Basil
1 Tbsp Dried Oregano
1 Tsp Onion Powder
1/2 Tsp Baking Soda (optional)

Loving Preparation:

1) Preheat oven to 425°F.

2) Add everything, except the herbs, to your high speed blender, & blend to smoothness. Once smooth, add in the Thyme, Basil, & Oregano, & stir.

3) Pour this batter onto a parchment lined paper, & spread evenly - being careful not to spread too thin or too thick.

4) Bake it in the oven for about 15min, or until the top is golden brown.

5) Once golden brown, flip the crust, & remove the parchment paper, & bake the other side directly on the oven rack until golden brown.

6) Lower heat to 400°F.

7) Add your favorite toppings (do try the baked squash!), & bake for 5 to 8 minutes - until veggies are baked to your satisfaction.

Enjoy the delicious crunch & wonderful flavors!💖 .
Note: If you do not have a high speed blender, simply soak the quinoa for few hours, & add less water while blending.

Hello! I'm starting to get good at perfecting my Tofu wok so I felt like showing you a little peak into my cooking. 🍝😊 1. A good quality Tahini and sesame seed oil (just a few drops) makes the wok taste great!
2. Don't you worry, I'm an expert at putting fingers in boiling water. ☝️😳
3. Dont boil the rice noodles to long or else it gets to sticky. And mash around for it to absorb all the spices and Tahini/soy sauce.

Only one day until Thanksgiving. Time for some recipe inspiration with this scrumptious pumpkin pie 🥧
Ingredients:
2 cups of glutenfree oat flour or dried mulberries
1 1/2 cups of date paste or 1-2 cups of pitted dates
Filling ingredients:
1 roughly chopped up pumkin, raw or slightly steamed (Hokkaido)
1-2 chopped apples
1 cup of dried apricots
1 cup of water
1 slice of ginger
1 tsp of vanilla powder
1/2 tsp of pumpkin pie spice
1 handful of dried cranberries

This Pumpkin Cranberry Pie can be made in two ways, raw or vegan, isn’t that awsome?! You can even make them both and see which one you like more!
Either way they are both dairy free, gluten free, nut free, egg free and overt fat free. Just perfect for a Thanksgiving come together!

Directions:
Add all ingredients for the crust into the food processor and process until it looks like a sticky cake batter. Add your dough into a layered pie pan and spread it evenly.
If you’re using the oat crust it’s now time to bake the crust for about 20-30 minutes at 100°C/212°F or dehydrate it at 40°C/118°F for 5-6 hours.
Meanwhile prepare the filling by blending up all of the ingredients, besides the dried cranberries, until smooth. Add more water if necessary. Fill it into a bowl and fold in the dried cranberries.
Fill the pumpkin cream into the crust and decorate it with additional cranberries or walnuts.
Enjoy with family and beloved ones! 🙏🏼🍂🦃🍂🙏🏼

Blueberry banana oat pancakes for this raining morning ❁ sorry I haven't been very consistent with my posting lately... uni is very busy at moment! But I hope you guys enjoy this delicious and simple pancake recipe✨✨ 1½ cups oat flour (or flor of choice)
1 medium very ripe banana
1 cup plant based milk (I used bonsoy)
Blend ingredients in a blender, heat a medium pan and pour some of the mixture in the pan to make small pancakes. Press in a few blueberries then when bubbles form flip and cook the other side. I cooked two pancakes at a time.
Add toppings and enjoy 🙌🏼 these are super healthy & taste amazing!!

Meet Getuk and yellow Merica, two of the highlights of our durian hunt in Central Java so far. We felt like we had just hit jackpot when we visited this farmer in Krasak village in the Wonosobo area. He kept opening them up for us, discarding the subpar ones and serving us his top notch stuff. Yellow Merica won my heart - think super sweet, thick vanilla pudding with tiramisu flavor! 😍 There was also white Merica (apparently camera shy) that tasted like thick white chocolate creme. After this feast, I was so high that I could kiss the sky 😄

Pineapple 🍍, ginger and turmeric smoothie 🙏🏼

Variety is so important! It’s how we ensure we get all the nutrition our bodies require. What’s available at the stores to us is nothing compared to the abundance and variety that actually exists on this planet as far as fruits/veggies go. I’ve got 4 different types of greens (spinach, Romain, butter lettuce, purple kale) and 2 different types of cauliflower (regular white and orange cheddar), zucchini’s, carrots, celery, & cucumbers all loaded up in the frig. Greens and veggies may be light on the stomach but pack a powerful nutritional punch! Remember to love being raw everyone and put a big smile on your face today! Raw vegan pizza from last week! I used @wrawp original pizza crust - sooo good. They're a staple in the house for @tenacioustal - they completely replaced the cooked pizzas he used to have.

This one was a treat for me! We use an alfredo-based sauce as the first layer (raw cashews, lemon, water and spices) and then top it with @absofruitlymel 's chipotle sauce from her ebook (highly recommend!!!). I added some shaved carrot, tomatoes, scallions and topped it with dulse (sea vegetable). If you have a dehydrator, you can put it in at 115F for 20-30 minutes. Otherwise, eat as is! I could literally eat 3 of these haha but I just stick to one when I do treat myself - all about balance my friends. -

Ingredients
4 carrots, chopped or 1 sweet potato, cubed
2 stalks of celery, roughly chopped
2 onions, sliced
1 cup parsley, finely chopped
1 cup of shiitake mushrooms, fresh or dried
2 tomatoes, chopped
1 bulb of garlic (about 6-8 cloves), minced
1 inch of fresh ginger root
1 inch of fresh turmeric root
8 cups of water
Optional: Chili peppers or red pepper flakes
Preparation
Place all the ingredients in a pot and bring to a gentle boil. Turn heat down to low and allow to simmer for about an hour. Strain and sip for a mineral rich, healing and restorative broth.
