We can't wait to read the book and to cook from it. We love such Palestinian specialties as maqlubeh (upside-down chicken with rice), mansaf (lamb with yogurt sauce and rice), m'sakhan (chicken rolls with sumac and pine nuts), and knafeh (sweet shredded filo and cheese pie), and we look forward to seeing how Reem Kassis prepares these dishes.
Yakir, my husband and writing partner, was born and grew up in Israel and I lived there for seven years. Yakir refers to the popular pocket pita as Palestinian pita, and I'm glad to see that Reem Kassis has a recipe for making it, as well as other familiar favorites like hummus and her grandmother's special baba ghanouj.
