I fell asleep watching Friends but wanted to make sure I had dinner going before my boyfriend got home from a long day, so I made half-asleep cauliflower and sweet potato dal like I knew what I was doing 😆 But it turned out scrumptious, which is why lentils and rice are two of my favorites. You can pack so much flavor into them with simple spices 💥💥💥

Thanksgiving prep for tomorrow with friends and I’ve made this maple roasted squash and lentil side dish from @penandspoon Roasting Tray Magic. No faff and not too much washing up! Plus a sprinkle of @zaytoun_cic zataar instead of chilli. Smells amazing! Although - very tempted to eat this for lunch today - no one will know it was meant to be on tomorrow’s menu... 🎃🍁🎃🍁🎃🍁

👉🏼The recommended daily intake or RDI for women: 19-50 years old: 18mg // 50+ years old: 8mg. The RDI for men: 19+ years old: 8mg.

As someone who is proudly powered by plants I am always exploring different foods that I can incorporate into my plant based diet that give me all of the vitamins and nutrients I need to allow my body to function at an optimal level 🌱

I have been 100% vegan for almost 2 years! Every year I get a full blood work up/physical, and both years I have been vegan ALL of my vitamin and protein levels were tested and came back perfectly healthy ☺️ proof that you CAN get everything you need from PLANTS!! 👏🏼

CARROT PUREE WITH LENTILS AND CHEESE

Lentils are packed full of important nutrients like protein , iron and zinc . Interestingly my lentil purees are some of my most popular recipes for babies from my books. This one is from my Complete Baby and Toddler Meal Planner .... Suitable from 6 months
Suitable for freezing

50g diced onion
1 medium carrot, peeled and chopped
25g red pepper, cored,, deseeded and chopped
15g diced celery
1 tbsp vegetable oil
2 tbsp red lentils
250ml unsalted or weak vegetable stock
40g grated mature Cheddar cheese

1 Sauté the onion, carrot , red pepper and celery in the vegetable for 3 to 4 minutes.

2 Rinse the lentils and add them to the pan and pour over the boiling vegetable stock.

3 Bring to the boil, then cover and simmer for 25 to 30 minutes or until the lentils are mushy

4 Top up with a little more water or stock if necessary .

5 Stir in the Cheddar cheese and blend to the desired consistency using a hand blender .

About last nights #vegetarian Lasagne 😋 It was one of “those” days where I had absolutely no time to grab groceries and needed to make dinner. So I scrambled through my fridge and pantry and whipped this delicious lasagne together.
If you are vegetarian, it is very important that you monitor your #protein #iron and B Vitamins intake. This dish has all 3 plus is loaded with fiber. .

Recipe
1 package of organic sprouted tofu

3 cups of spinach

1/2 onion, chopped

1 can of garlic tomato sauce
2 tablespoon oregano
Olive oil for the pan

1 box of @explorecuisine green lentil lasagna noodles

1 package of @daiyafoods mozzarella style shreds dairy free cheese

Begin by boiling water and preparing the lasagne noodles as directed on the box. Next, sauté the onion, 1 cup of tomato sauce, the spinach and cubed tofu in a pan. Top with a pinch of salt/pepper and 1 tablespoon of oregano. Set aside.
When the noodles are cooked allow them to cool. Meanwhile, place 2 tablespoon of tomato sauce on the base of a baking dish. Place 3-4 noodles on the base. Add 1 teaspoon of tomato sauce plus 1 teaspoon of @daiyafoods to each noodle. Pour 1 cup of the tofu spinach mix over top. Place 3-4 noodles overtop and continue until you use up the ingredients.
On the very last noodles, top with more tomato sauce and @daiyafoods cheese then oregano.
Bake in the oven at 400 degrees F for 18 min. Enjoy!!

I Made My Version Of A Gardeners Pie. I wanted to cook again today. We take in turns. But I really wanted to make this Pie. So...Firstly I added potatoes in a hot pan of water. Under the cut up potatoes is: lentils, sweetcorn, green beans, chopped garlic cloves, white beans, tinned tomatoes, three vegetable cubes, oregano, pepper, salsa, powdered garlic, salt and rock salt sprinkled on top. My man did help me to chop up the potatoes which I placed on top. And sprinkled the rock salt and oil. Then I cooked in the oven. To soften the vegetables nicely and to harden up the potatoes and crisp them slightly. The meal went down very well. And there’s plenty left over. For two plates fulls. .
