Couscous is underated,yet sooo good for us. Healthier, lighter and has a lower calorie count than rice. Unfortunately most of us buy the ready made microwave couscous. Cooking it from scratch tastes better, and you can control what goes in the couscous dish. I cooked mine with peas, and one of my favourite, and everyday ingredients, lemon 🍋🍋🍋. . . . Following a lot of research regarding the importance of a healthy varied diet, the way I cook and eat has drastically changed, for the better. One my resolution , was to not only eat healthier, but also being 'smart' about food. This means a more varied and balance diet, and introducing new ingredients to our family. Smart for me meant 'recycling' meals, using every items bought. Cooking couscous this way is a great way to utilise the lemons. We often use either the zest or juice , but not always both. . .
Here is what I used; Zest of 1/2 a lemon Juice of 1/2 a lemon An onion 200g couscous Oil Salt to season
