Gluten Free lemon chia & coconut pudding for this mornings breakfast. The lemon gives it a nice little hit to get you moving for the day πŸ‹. Recipe: 1/3 cup gf rice flakes ( can use oats if not needing it to be gf) + 1/2 cup either soy, almond milk or cows milk+ 1tblsp coconut, 1tblsp chia seeds + 1tsp honey + 2tblsp fresh lemon juice + zest of 1 lemon + blueberries & greek yoghurt for topping. METHOD: Mix rice flakes, coconut, chia and lemon juice together, then stir honey, lemon zest and milk into mixture. Pour into glass jar and let set overnight. Top with greek yoghurt, blueberries, lemon zest and coconut. Serves 1. Enjoy! πŸ’›

Ingredients for 1 glass
1 lemon juice
1/2 spoon chia seeds soak it in water for 30 minutes and use it.
1 spoon sugar or sugar supplement
1/4 spoon pink salt
1/4 spoon cumin seed powder
Mix the ingredients well and serve by adding 2 pieces of fresh ice.
