Heat oil in a pot and saute the eggplants. When browned set aside. Saute in the same pot the zucchini then set aside. In the same pot saute the onion then add the garlic. Add the tomato paste, the chopped tomatoes, the spices and the salt and pepper. Mix and then let cook for 5 mn. Add the bulgur, eggplant and zucchini then add the water. Toss to combine. Cover pot and allow to cook on medium low heat for about 20 mn or until bulgur absorbs the water.
