The olive that started it all! Well, maybe not the exact olive, but this beauty from our recent stay in Provence is a reminder how I started: a passion for olive oil. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
By now I think we all know olive oil is the best or at least the preferred oil of choice. The problem is that there is an incredible amount of junk out there. Real olive oil is something to be savored and celebrated. Among these, French Olive Oil is the real jewel! French Olive Oil costs 9-10€ per liter to produce...whereas Spanish and Italian oils cost usually 2-3€ per liter. This means that you will rarely find French Olive Oil in the States or it will be very expensive. Our Olive Oil Discovery class next Thursday evening will feature decadent French Olive Oils just brought over from the very debut of the season! This is your chance to learn more about this gem of a product and to taste them in a professional tasting.

Are you starting to eat more real foods? So now you feel like you’re eating the same amount of food but are always hungry? Processed foods are very high in calories and fat and very low in nutrients. Real food is denser, lower in calories and fat, and higher in nutrients. You can eat more quantity of real food. Yay 😁 more food 🙌🏼
This happened to me, I started eating better but was starving all the time. That’s when I started tracking my food in MFP and realized in order to get an appropriate amount of calories in, I needed to eat more. Scary at first, as it always is to go against everything you thought was right and eat more food, not less.
Pictured above is 2 oz of chicken or 18g of protein vs 4 oz of chicken, 35g of protein. Then a few strawberries vs a full serving of strawberries. Then a little handful of spinach that people grab vs a serving of spinach (which is 20 calories). And last, what a cup of chopped veggies looks like, also 20 calories.
This morning I ate 215g of sweet potato 🍠 1 cup of veggies, 2 eggs 🥚 plus 2 egg whites sautéed in 1/2 tsp coconut oil. It looks like a lot of food but that’s only 442 calories, 26g of protein, 12g of fat, 59g of carbs, and 8g of fiber. I’m full and used all real food that my body will use.
When you take out all the processed crap food and are eating more real food, I highly recommend you track, weigh, and measure your food in MFP for awhile. It will help you learn how many calories are in your foods, what combination of foods creates a balanced plate, and help you learn how to eat intuitively again with whole food, minus all the chemicals, preservatives, and sodium, all of which throw off your ability to eat intuitively.

Once upon a time I took Italian cooking classes with Anna Teresa Callen, a food writer, historian, chef and educator from Abruzzo, who never called herself a chef but instead a cook who “learned from her grandmother’s apron strings.” I loved learning from and spending time with her every week, and eating what we’d make with her neighbors and her husband Harold. She inspired me back then and now more than ever, as we are about to launch our home cooking experiment for tweens and adults. If I can convey an ounce of Anna’s instinct, ease and practical approach to cooking, we will be golden.
