Pickling is a simple process that not only gives you a brand new flavor profile to play with, but also saves your food from being tossed into the rubbish bin. Try it with ginger to spice up your plate in a whole new way.⠀
Here’s how to do it...⠀
- Ginger, Sugar*, Vinegar*⠀
*Can be any kind, really. We enjoy coconut sugar + apple cider vinegar for a less refined, healthier option.⠀
1. Peel ginger with a spoon, and then you can slice thin with a mandolin or knife, or leave ginger whole. Place in a heat-proof container. ⠀
2. Heat sugar and vinegar on the stove and until sugar dissolves, then pour over ginger.⠀
3. Let sit uncovered until cool, then close and refrigerate. ⠀
The longer it's allowed to pickle, the sweeter and less sharp it will taste. We left our sliced ginger to pickle for one week and the whole ginger for about two weeks.
