Red Thai, Mango and Coconut curry πŸ‘ŒπŸΌ. Perhaps the biggest benefit of switching over to this lifestyle is that if we make a conscious effort to limit our sugar, processed foods and fat intake, we can literally eat until we feel full and our bodies have said 'thank you very much, I'm done now'. This is actually one of the very reasons that we always recommend brown rice and brown pasta, because the fibre and bran in these foods slow down the absorption of the entire meal, and help you to feel fuller for longer. So, please don't buy the refined carbs that we know are unhealthy and don't help us to reach our goals. #vegancurry

CHICKPEA AND SPINACH CURRY... on steroids πŸ’ͺ🏽. It's fair to say that both Justin and I haven't been feeling 100% lately, needed to get back into our routine, and really needed to fuel up well.
Well, how about a chickpea and spinach (from frozen) curry which has onions, garlic, tomatoes, bok choi, yellow peppers, fresh ginger, lime juice, red peppers, and avocado served on whole grain rice? The way we both felt having woken up to that fuel was just incredible.
This may look like a mountain of food, but the way in which it's digested is going to be so slow, and will burn gradually. You're getting an awful lot of fibre from all that veg, fat and water soluble vitamins, which can be consumed through the fat in the avocados and water in plants.
Then the iron in the spinach can be very well absorbed and used from the Vitamin C provided from the lime juice and tomatoes.
Chickpeas provide a complete protein with the combination of brown rice that helps you train and build these πŸ’ͺ🏽 over and over again.
I could go on forever about the nutrition that's packed into this meal, but I'll just leave you with this.
A whole foods plant based diet is always going to be an easier way to shed fat and lose weight sustainably, because you're not forcing your body to adapt to something it's not meant to be going through. Glucose is your bodies favourite fuel, and with a plant based diet, you provide your body with it in abundance, with such nutritional density that your energy levels are highly elevated, so much of the time.

It's no wonder that people who switch over, can't seem to imagine going back, because they always say just how good they feel, that they wonder why they didn't do it in the first place πŸ’ͺ🏽.

Let's talk though. Because the sun's still out here in England and I'm feeling incredibly grateful to have had my eyes opened wide to the health benefits of a plant based diet. If you feel that you're still unsure about trying the diet out, or you're still scared about what you might have to sacrifice, that's okay. We all move at our own paces, and no one should be forced into this.. it's a transition that people will eventually make, but I believe that everyone else will make the transition simple because we plant based advocates simply feel too good for them not to.. here are my top 5 benefits that I've personally experience since making the switch: πŸ”₯. 1. LOWER BLOOD PRESSURE - 110/70 with a pulse of 50. Just last week I had to go into the doctors and get an update on my blood pressure. It was no surprise to get this result, as I've never had any concerns with it before, but it's slightly lower than it was before πŸ”₯. 2. HEALTHIER SKIN - I always had a feeling that there was a reason behind my occasional issues with dry skin, but since making the switch, I've increased my intakes of vitamins A and E which have resulted in very healthy looking skin. πŸ”₯. 3. ENERGY - this is perhaps the best benefit. Any slump that I used to have seems to have just gone away. Now I'm always on top of my game and feel as though I'm raring to go no matter what time of the day it is. πŸ”₯. 4. WEIGHT LOSS - I lost fat in a really short period of time without actually trying to. BREATH - this may sound like a silly one, but I used to have a big problem in the mornings with a breath that just smelt so awful I couldn't be around anyone until I'd brushed my teeth.
