INGREDIENTS 🥔about 1-2 kilos potatoes, prick with a fork and microwave in batches for approximately 20mins. You can boil them too but I find they are a bit soggy this way
🥔1/4 bunch parsley; chopped 🥔1/4 bunch celery; chopped- use the tops too!
🥔1/4tub lactose free yoghurt; @barambahorganics 🥔1 small tub creme fraiche; I used @bullafamilydairy 🥔10 drops lemon oil or the zest of 1 lemon
🥔2-3 dill pickles; chopped
HOW TO MAKE 🥄gently mix cut, warm potatoes with the combined yoghurt, lemon, pepper and crepe fraiche
🥄add parsley, celery and dill pickles and stir gently to combine
🍽I prefer to eat this salad on the day I make it but it does keep well. You can vary it by adding;
Hard boiled 🥚
Cooked chicken 🐓
Trout, salmon etc.
