The extent of my keto baking is 90s bread every few weeks. Today was one of those days. Saturday morning brunch of avocado and feta smash on 90s bread with a side of halloumi and topped with everything but the bagel seasoning. That should keep me going for a while lol

Having been morbidly obese most of my life, the day I hit just plain old obese was a milestone for me. Today I became just ‘overweight’. Not obese, not morbidly obese, just overweight. I know bmi is a crap measure but this was the one immigration was so focussed on for my residency application, so it’s one I’ve been monitoring since I started this journey in feb 2017. At that point my bmi was well over 50, and I needed to get it under 35, something that I thought was impossible. Bring on ‘normal’😂

Went to my first ever book laugh today. New book from @whatthefatbook #whatthefast signed by @caryn.zinn @chefcraigwtf & Grant. Not great photos of them as I was right at the back but it was a fun evening

Dinner tonight was amazing. I signed up for a keto/low carb meal planner through @ditchthecarbs and @realplans. On day 2 of the first week. This was beef barbacoa bowls. Beef was slow cooked all day in a pile of seasoning. Then piled on top of cauliflower rice. Then wilted spinach, tomatoes, avocado , coriander/cilantro and spring onions on top. So much flavour in one bowl. Delicious!

We went to a lego exhibition today. And there was a model of the golden gate bridge. I got to cross the real bridge just over a year ago. That's me on the left. The right hand pic is me today. The bridges look a little different 😂😂 ps I'm wearing my new denim jacket. The first one I've ever owned in my life as I never liked the ones that they made in the plus sizes 😞

Quick and easy meal after a busy day. Rotisserie chicken. Salad leaves. Mayo. Job done 😂😂

Sunday brunch. Keto is so hard. I feel so deprived 😂😂😂 I don't cook breakfast often ad I just don't have time. Weekends are generally more relaxed but I knew today was going to be a busy one so cooked a good breakfast. Chicken and bacon sausage from my local butcher, bacon, egg, mushrooms, probably my last bit of avo this season 😢 and 90s bread (something else I don't have often lol)

Quick and easy dinner tonight. Cooked by my 12yo so even better 😂 egg roll in a bowl. Using beef rather than pork mince cos that's what I had lol.

Haven't posted much this week as I've been a bit off colour. Weight has been all over the show. I got a stomach bug so have blamed everything on that 😂😂 still not feeling quite myself but getting there. For dinner tonight I made fakeaway fried chicken. Recipe courtesy of @ditchthecarbs. Mr12 declares it was better than the real thing 😂😂 it was very tasty I have to admit

#transformationtuesday. I wasn't sure whether to post this as there's still way too much yellow and there's no hiding from this lol. But this is me. 6 months apart. For those that don't know what they're looking at, it's a dexa scan. Blue is bone, yellow is fat and pink is everything else (muscle organs and water) there is 10% difference in body fat between these two. And no loss of muscle mass. Something that I've been working hard to make sure is that my weight loss is from fat rather than lean mass. And this shows it's working. 3 months time I'll get another one. And I'm hoping for less yellow and more pink on that one. Oh and biggest #nsv is that I actually fit on the bed this time. I didn't last time.......

Keto comfort food on the menu tonight. Beef schnitzel using protein powder and pork rinds for the crust. And then cauli and brocolli bakes with bacon and onions in a cheese sauce. Sometimes you just need comfort food. 🤷

I’m starving!!! Spent the day with the kids at Kiwi Valley which is a small farm and I forgot all my #keto snacks!! This pizza recipe by @ruledme is great for when you just can’t wait for a fathead base to cook! Off out with friends tonight 🙌 happy Friday!!

I made my own #Keto granola last night and it tasted beautiful this morning, topped with unsweetened yoghurt, almond milk and strawberries! I followed a recipe online, but will probably leave out a few ingredients for next time 😊
