I came across an Italian biscotti recipe recently that used boiled egg yolks. My curiosity meant I just had to try them.
Biscotti Canestrelli are from the Piedmont and Liguria areas of Italy and are it seems traditionally shaped like this.
Made from hard boiled egg yolks, lard/butter, vanilla, icing sugar, potato starch, 00 flour. I added in some orange zest..just because! All the recipes I've seen as well as this one says they are shaped as flowers.. but Canestrelli translates to "little baskets"!! Anyway, they are short, sweet, crisp and totally delicious.. these are a keeper.
