Yummy Citrus Shrimp & Avocado Salad for dinner!
1. In a bowl, toss together the shrimp, lemon juice, chili powder, cumin powder, olive oil and salt, set aside while you preheat a pan on high heat.
2. Cook the shrimp on the hot pan for just a couple of minutes until fully cooked through, remove the seafood and place them in a bowl, set aside.
3. In a small mini chopper, add the cilantro, olive oil, lemon and garlic and pulse until just about smooth.
4. Add the remaining salad ingredients along with the vinaigrette to the bowl with the shrimp, toss all together to mix then cover and pop it in the fridge for about half an hour before serving.
