I am prepping food for my trip back to Wisconsin. And pancakes are on my list of To-Bring items. These are the prettiest stack of pancakes I have ever made and taken a picture of. Haha. I got this recipe from KetoConnect.net.
These bad boys have a ton of flavor and the texture is really soft and fluffy. They're actually a lot fluffier than I would like so there are a few changes I made to the recipe.
The Original Recipe (for exact measurements, I suggest you visit their website. There are a ton of good recipes to try.) 1. Cream cheese
2. 8 eggs
5. Isopure Protein Powder
6. Vanilla extract
My version of the recipe:
1. Cream cheese
2. Coconut Flour
3. Baking powder
4. 8 eggs (egg whites whipped)
5. Vanilla Extract
6. Vanilla Salted Caramel IsoPure Protein Powder
7. Vanilla Extract
8. Caramel Stevia (optional, I added the stevia because I did not have sugar free maple syrup. So adding a sweetener to my pancakes lets me eat them without adding a syrup.)
9. Crushed Macadamias (Optional, gives a nice balance texture from the super fluffiness.)
To taste test, I ate one by itself. Packed with flavor and satisfies my sweet tooth by 50%. I the used the pancakes to wrap a couple of bacon strips, avocado slices, and a bit of pink Himalayan salt. #yum #tasty .
If you like them a bit more savory and and somewhat of a brunch-like item, you could add some melted cheese, sour cream, and chopped chives. Just play with it and make it your own. (^-^)b
