MARGHERITA PIZZA PERFECTION
I've essentially given up all hopes and dreams of creating legit neopolitan pizzas at home. It's simply not possible without proper convection and a 900+degF wood oven. I can hack one up well enough, but it's always a let down. .
Enter @roberto_caporuscio and @pizetta90 . They've been killing it at Keste on Bleeker for years, and now they have a larger Wall Street outpost. Got to stop by the other day and enjoy this margherita pie covered in amazing fungi and some of the best cheese, among other glorious items. The dough is simply perfection. .
I love playing with pizza at home, but I'll stay in my lane with NY/Neo-Neopolitan pies and foccacias.
