Grill Mark Texas Brisket Taco's
1 whole packer brisket
Trim the fat around the whole brisket
Season brisket with 50/50 salt and pepper
Place on the grill.
Cook until you hit the stall (usually around 160 internally)
Remove and wrap in heavy duty foil and place back on the grill.
Start probing for tenderness at around 197-203 internal temp.
Once tender, pull off grill, move to cooler and let it rest until ready to eat!
With these we also made our own brisket slaw.
1 whole cabbage
Cut check board cut on top of cabbage about half way down.
Season with salt, pepper, favorite BBQ rub, garlic powder, and paprika.
In the cuts, put 1tbs of butter and spread around the cuts.
Place 3-5 bacon strips on top and in remaining cuts.
Wrap in foil and place on the grill at 225 for 4-6 hours.
Remove, chop and place on bowl.
1tbs of vinegar
4tbs of olive oil
1/2 cup of mayo
3tbs of BBQ rub
Chop the bacon strips and add into bowl.
Add finely chopped tomato, onion and jalapeño.
Mix and add more olive oil to mixture until smooth.
Top on your taco and be the envy of all the neighborhood as you show off your grill mastery.
At grill mark's the grilling is so rare, it's well done!
