Individual pumpkin pie tartlets to celebrate the first day of October! These are for a friend who recently discovered their allergy to nuts (*sob!!) and I was able to make these with a sunflower seed base (and crumble topping), and without nuts for the filling. They look so pretty in the autumn sun but are best when kept in the freezer or fridge. 🍞 A little about bread. 🍞

I introduced gluten into my diet this past summer after avoiding for 2.5 years. I had been thinking about it for awhile because, well I wanted to. No big excuses or reasons, I just plain and simple wanted to eat it. I even made sure to get ONLY long fermented sourdough bread that was either organic or locally sourced with the best ingredients. I felt that I had progressed so much in my healing and was feeling so great that I thought I could successfully add it in without issue. Or at least I REALLY was hoping so! Unfortunately this wasn't the case for me. I tried to fight the symptoms that came after eating it, making excuses that it was probably something else and I was just overthinking things. While I didn't experience a TON of symptoms, I did have 2 big issues: a brain fog that was like a complete haze over my entire brain and body & extreme fatigue - like so tired I had to nap everyday and I felt the exhaustion in my bones. I knew my brain was being inflamed. I would stop eating it for a couple days and within minutes of eating it again I was feeling heavy and foggy again. It took me 2 months to realize it wasn't worth it. My well being and my health was not where I wanted it to be and I decided to give it up. I know why it effects me this way thanks to Anthony William. In many shows he talks about how gluten feeds pathogens and THAT is what is the cause of some inflammation. Gluten ITSELF does not inflame the body. What gluten DOES do is feed the invaders (pathogens) in your body that give rise to inflammation. Fueling these pathogens can lead to a host of negative reactions in the body, but the gluten is not directly responsible for any of these negative consequences. And as you know, I have Hashimoto's, which is caused by a virus, EBV. Hashimoto's is a more advanced thyroid viral problem & can take a more vigorous approach to healing. So even though I may have felt like I was arriving in many areas in my healing, my viral load showed me I wasn't there. These pathogens can hide out or become dormant and certain triggers release neuro-toxins and can cause many symptoms. 👇👇👇👇👇

Cooked brown rice and caraway with a legumes mix (red beans, black beans, soy beans, brown lentils, red lentils, split peas).
Recipe: Leave the rice in water for few hours in a pot. Then boil the rice and caraway till there's no water left (15 minutes), and then cover the pot and let it steam for 5 minutes). Leave the legumes (an even amount for each one) in water overnight and then cook them with two tbsp of tomato paste and desired spices for 1-2 hours (until they turn soft). برنج قهوه‌ای دم کشیده با زیره همراه با خوراک حبوبات (لوبیا قرمز، لوبیا سیاه، لوبیا سویا، عدس، دال عدس و لپه).
دستور: برنج رو بعد از چند ساعت خیس خوردن با زیره بجوشونید تا آبش تبخیر بشه (١٠-١۵ دقیقه)، بعد به مدت ۵ دقیقه دم بکشید. حبوباتو (هر کدام به یک میزان) بزارید خیس بخوره یه شب تاصبح، بعد با مقداری رب گوجه و ادویه دلخواه بزارید ١-٢ ساعت بجوشه تا نرم بشه. ---------------------------------

Did you say Satan or Seitan? Either way, this dish is a little devil😈 in deliciousness 😅 Seiten Portobello Stroganoff from @isachandra and her cookbook Vegan with a Vengeance. Had fun making the seitan. Not hard to do at all. This dish has some nice layers of flavor to it and the colors are perfect. I added more veggies (as per usual) the shallots are a pain in the butt to work with but worthy of the time. I haven't done a juice cleanse in years but lately my body has been asking me for a reset...I haven't been as excited by food nor do I really crave anything in particular so I just end up eating whatever and not being super satisfied - so it's time for a total reset as the seasons change! For me juice cleanses help to recalibrate my tastebuds and my hunger clues...in addition, the mental challenge has a huge payoff in the form of clarity, connection and gratitude. Normally I like to make my own juices by way of my vitamix and a good old #nutmilkbag but when cleansing for a prolonged period I think it best to just leave it to the pros. Headed for a bumper 🍅 crop from the @vegepod this summer. Mini Roma plant has reached its vertical limit so I may have to transplant? While dwarf cherry has loads of promising flowers. Strawberry plants are luscious but still taking up too much real estate given the relatively small crop. Thinking of swapping them for some chilli plants or other summer veg. Made something new on the fly tonight. It needs a name. It's kind of like taco filling and contains mushrooms, tomatoes, peppers, jalapeños, olives, zucchini, #beeflesscrumbles by @beyondmeat and seasonings. I served it with homemade guacamole and #glutenfree chips. Fabulous and really easy!! Any name ideas?

Kimchi cauliflower “rice”. Riced cauliflower, kimchi, Korean red chili pepper flakes, white miso, ginger, and scallions. Ingredients are stir fried in a pan an topped with sesame oil and spicy seaweed flakes.

Kid lunch today: 1 sandwich with PB and apples and 1 with mashed avocados, hemp seeds, cucumbers and #vegancheese. Both on #glutenfree oat bread. .
